Everyday Creations with Chef Greg Villalon and Mega Creations Premium Sardines

As hard this is to admit, I say I kinda look down on sardines because at home we usually open a can when we don't have anything to cook. It taste good on its own, but at times we usually cook it with sotanghon and pechay leaves just to elevate its taste. Come to think of it, I seriously can't think of any other way to cook sardines other than that.

This week being the Lenten Season, people at Mega Sardines recently launched Mega Creations Premium Sardines via the Everyday Creations with Chef Greg Villalon, by preparing different dishes using this humble ingredient not usual to the typical types we do at home.

With the help of fellow blogger Josephine of Cogito Ergo Sum, they prepared two dishes:

Asian Style Sardine Sub Sandwich

True, one can just mash the sardines and spread it on pieces of bread (and toast it if you want to), but why not make it gourmet by adding Hoisin Sauce and Pickled Mushrooms? The Hoisin Sauce added a little sweet twist to the sandwich, while the Pickled Mushroom gave it the fruity tang (as it used Apple Cider Vinegar). It truly tasted good, but I think I will add lettuce leaves when I recreate this at home.

Next key ingredients paired with the Mega Creations Premium Sardines are cumin and sweet potatoes. Very intriguing and interesting, right? Under the dish is mashed sweet potatoes (the orange kind so it will add more color), in the middle is the sardines layered with spinach and at the top is breadcrumbs mixed with cheese and olive oil. In a way it sort of reminds me of Shepherd's Pie, but very different - in texture and flavor (because of the cumin).

I loved the contrast between the slightly salty sardines and toasted breadcrumbs with cheese to the mashed sweet potatoes, and is perfect as a meal on its own.

Cook Off

The first two dishes may sound expensive, but they are not... and they're quite easy to prepare, too. For the final dish, they made sure cooking with Mega Creations Premium Sardines is very easy, which was why they called off two attendees to have a friendly cook-off. Well, proud sister here... one of the competitors was my brother!

Sardine and Cilantro Pesto Pasta

Both of them were given the recipe sheet, all ingredients were cut and prepared, all they had to do was cook. Their dish is called Sardine and Cilantro Pesto Pasta, and at first I was a little worried because Ms. Roxanne of Lifestyle Channel was already a few steps ahead, while my brother was stuck on the first step because his pan wouldn't heat up. :)

They were given 10 minutes to cook their dish, and although Ms. Roxanne finished after 6 or 7 minutes, my brother was able to cook his dish within the time limit.

Judging Time

After tasting both dishes, I was happy to share that my brother was declared the winner. Yey!

This dish was amazing to say the least. Normally, when one say pesto, it would mean using basil as the main ingredient, yet this used cilantro and it tasted really good! Cilantro isn't something I always go for (because its taste can be a little overpowering), yet turning it into a pesto sort of mellowed the taste.

Mega Creations Premium Sardines is available in two variants - in Natural Oil and Spanish Style. I already got to taste both, and found them really tasty. What I loved the most was that it has less scales on the fish, making more pleasant to eat even on its own. The Spanish Style has a spicy kick, but not really that spicy, so even if you're not into spicy food, you will still get to enjoy it.

A Sandwich, a casserole, and a pasta dish. Just three of the many ways you can cook with sardines. Snacks After a Shopping Spree

My weekend started a little bad - not being able to go to the sale at SM North EDSA, but Saturday, moods started to change for the better, and even if I wasn't able to check out the sale because of many personal reasons, I was still able to shop that afternoon with my mom and sis, and I was able to find a pair of DKNY Jeans, making me cross off an item on my bucket list (ever since college I dreamt of wearing/using DKNY products).

After that short shopping spree, we went to eat some snacks. We decided to just eat at Jollibee - mainly because it was raining hard and Jollibee was the nearest food place. I was still not hungry as I ate quite a lot for lunch, so I told them I'd just go for the usual favorite..

Jolly Hotdog! Of all the sandwiches Jollibee has to offer, this has got to be my favorite.

Jollibe Cris-Cut Fries


Normally, the Jolly Hotdog value meal comes with regular fries, but I asked if I could upgrade it to the Cris-Cut Fries just so I could taste it. They allowed me to go for it and I chose the cheese flavor. Well, it wasn't that crunchy compared to the fries, and it seemed to have a lot of cheese powder so overall I found it a very salty snack. Well, it was good, I guess, maybe the one who prepared this put in quite a lot of cheese powder.

Jollibee Iced Coffee Float


My mom and my sister both had the Champ, which I wasn't able to photograph, but instead of having the regular drink, sister went for the Iced Coffee Float. I took a sip and it had the right blend that I prefer in a coffee - it was creamy, it was sweet, and it had the bitter taste of the coffee. I wasn't able to blend in the sundae, but it was okay, I think this drink is something I might go for next time.

It was my last meal for the day - I told them I won't eat dinner anymore and I didn't. Halfway through the month and I am still struggling with my weight loss journey. Ugh, I really need to pick myself up and finish what I started.

Recipe | Tocinokatsu with Cheese Scrambled Eggs

I have a lot of things going on in my head lately that I neglected my fitness routines, I am eating irregular - I'd have breakfast at 11am, lunch at 4pm, and eat dinner before I sleep at night. I feel bad at many things that I am starting to lose focus on things I need to concentrate on. With that I have a confession to make: I lost track of many things that I forgot today's Friday - a "no meat" day supposedly, but I woke up real early to prepare this breakfast for my family.

My main reason of serving this is because my sister has been waking up real early everyday to get to work on time, but because she gets home late and would like to sleep longer, she would use a little more extra time catching up on sleep rather than cook herself some breakfast. I felt a little guilty and worried about it, so I decided to wake up and cook all of us breakfast, just so sis and mom would take a break from eating cheese sandwiches.

This recipe I am about to share is taken from YUMMY Magazine March 2012 issue.

Tocinokatsu with Cheese Scrambled Eggs

Tocinokatsu with Cheese Scrambled Eggs
{Serves 4}

Ingredients - Tocinokatsu:
  • 1 (500-gram) pack ready-to-cook tocino
  • 1 egg, beaten
  • 1 to 2 cups Japanese bread crumbs
  • oil for frying

Ingredients - Scrambled Eggs:

  • 5 eggs
  • 1/3 cup Cheddar cheese, grated
  • 1 to 2 tablespoons butter

How to Cook:

  • Make the Tocinokatsu: Toss tocino with the beaten egg, then coat each piece with breadcrumbs. Heat oil to medium and pan fry coated tocino in batches. Drain on paper towels. Set aside.
  • Cook the Cheesy Scrambled Eggs: Beat 5 eggs in a bowl then add cheese. Melt butter in a nonstick pan, add cheesy eggs. Cook to your desired doneness.
What I loved about cooking this dish is that coating the tocino with breadcrumbs actually made it easier to cook, as we know tocino can be a little messy to cook - because of its caramel. When I served this, brother exclaimed, "It did taste like katsu!" A great indication that he liked what I served.

As for the eggs, the addition of cheese was a nice change, but as we ate more and more of it we tend feel "suya." Good thing I garnished it with spring onions, it added a little bit of dimension to the taste.

According to the magazine, you can also use beef tapa to this recipe, or use a different kind of cheese for the eggs. They also recommended serving it with salted eggs and tomatoes, but I felt it was a little too much eggs for the day, but of course, it is something you can also serve - not everybody wants scrambled eggs anyway.

Days 2 and 3 at Mountain Beach Resort

Was supposed to do three posts for the foods I ate / tasted while vacationing at Mountain Beach Resort with K, but I realized we only had breakfast on our third day, so I decided to just squeeze all in on one post.

The night before, K and I could hear the music from White Beach. While it would be nice to join in the party, somehow we felt being in a very quiet place allowed us to enjoy the vacation more. We woke up pretty early the next morning - checked the sunrise colors near the beach, and thanked the heavens for a brand new day.

BREAKFAST (Day 2)

Longsilog

LongSiLog. What I had for breakfast. I wasn't able to take a picture of K's breakfast as he ate it right after it was served... but I did like what I had. Well, the longganisa tasted typical, and even if the egg didn't look good, I appreciated it that they took into consideration my request - to cook the yolk thoroughly. :)

After breakfast, we sought the help of the resort to find us a guide that would take us to Talipanan Falls. While planning this trip, I came across a blog post suggesting tourists trek to the falls, so we definitely put that as part of our itinerary. It was a fun trek that made my Puerto Galera experience very unique, especially that we also interacted with the Mangyan Tribe, whose community we passed by going to the falls.

LUNCH (Day 2)

Chicken in Chili Corn Sauce

Chicken in Chili Corn Sauce. K didn't like to eat lunch, so it was just I who ate that time, but he stayed with me at the dining area - checking football news through the Internet. Since they still don't have beef and seafood, I decided to go for this chicken dish, that really made me hope I knew how to cook it. It's just fried chicken with chili corn sauce... it was spicy, but what caught my interest was how the sauce came together. It was a great dish.

Mango Shake

Mango Shake. The trek made me tired, so another glass of cold drink for me.

Come afternoon, we just checked the sea shore, interacted with the locals and took pictures. An unfortunate thing happened - the tripod where my camera was on tipped over and the lens of my camera caught a lot of wet sand. It was still working, but the crunchy sound made by the sand got me really worried.

DINNER (Day 2)


Chicken in Apple Normandy

Chicken in Apple Normandy. Another choice from the chicken part of the menu; like the one with the chili corn sauce, this proved to be another interesting dish that made me wish I knew how to cook it. The apple added a nice twist of sweetness to the dish, the pepper was just awesome! The sauce... I don't know how they made it syrupy - can't tell if it's cornstarch because the sauce was a little clear, but I am glad I ordered this... and I am hoping somehow I can get the recipe.

Pork Schnitzel, Take 2

Pork Schnitzel. Yeah, K had another serving of the Pork Schnitzel. This had lesser meat and more fries, but he had no problems about it.

Coffee

Coffee. Something to help calm myself after the heartbreaking turnout of events.

I wasn't happy that night. I tried to keep positive despite what happened to my camera, and I was glad K understood what I was feeling and even asked me to cry if it would help. I didn't... because I still could use my camera. I was just sad.

The next day, we fixed our things to get ready to travel again, but we had breakfast first:

BREAKFAST (Day 3)


American Breakfast

American Breakfast. K's meal. I honestly wouldn't be satisfied with this, but K was already happy with this, he doesn't eat that much rice anyway.

Tosilog

ToSiLog. I went for tocino this time, and I didn't have to tell them about my sunny side up egg - they served me something I appreciated. The yolk wasn't 100% cooked thoroughly, but at least it wasn't runny.

Both breakfast was served with a cup of coffee.. but it was the typical Nescafe coffee in sachets, served with packets of cream and sugar.

We left Mountain Beach Resort around 7am, the tricycle took us to a port somewhere where we took the boat going back to Batangas Pier. From there, we took the bus going back to Manila and headed straight to NAIA Terminal 3 as we have a flight to catch going to our next destination: Iloilo.

Breakfasts at Fernandina

Part of our stay at the Fernandina 88 Suites Hotel is the free breakfast, which was served at their 1572 Restaurant and Ballroom located at the 7th floor of the hotel. Since I wasn't really able to take lots of pictures for the two breakfasts we had, I will just share to you images for both days.

Buffet Spread - Day 1

Day 1. We were actually a bit late for breakfast - we didn't know there will be a buffet, we thought we will place orders for breakfast like what we always had, so there weren't much food left for us to eat.

Tapa, Ham, Longganisa

I had Beef Tapa, a slice of Sweet Ham, a scoop of Scrambled Eggs, 2 pieces Skinless Longganisa and a small bowl of Pumpkin Soup.

I loved the tapa because it was tender and very flavorful, but I didn't like the egg much because of personal reasons. It was good, but not my type of egg, if you get what I mean. The ham tasted like typical ham we get at the supermarket, and the longganisa was okay, too. The soup wasn't really hot anymore (well, we were late anyway), but I liked that it had the right balance of sweetness and saltiness.

K had the typical English breakfast - bread and jam. We also had coffee to go with our meal.

Buffet Spread - Day 2

Day 2. We will be leaving for Puerto Galera that day, so we went to the restaurant early. True enough, there were more food choices this time of the day, and because we will travel and might not have the chance to eat while traveling, I told myself I'd eat a lot! Hahaha.

Egg Drop Soup

Egg Drop Soup. Hot and comforting! I love it!

Hotdog and Fish

Plate 1. Hotdogs didn't taste like TJ Hotdogs, but it was good. As for the Daing na Bangus, well, I didn't like that the breading was a little too much, but I don't have any complaints about the taste - it was marinated good, so even without the vinegar dip, I enjoyed eating it.

Pork and Fish

Plate 2. I felt a bit disappointed to see the Sweet and Sour Pork because I just had that dish last night at the same restaurant (will talk about our dinner on the next post), but it was actually delicious that I still ate it for breakfast. The Fish Strips was another good dish, but for this I actually took some vinegar dip.

As always, K had the bread and jam; both of us had coffee (he had two cups, I believe), and we ate some fruits for desserts.

I am kinda liking the Breakfast Buffet - as a hearty eater, knowing I have many choices makes me satisfied.
