Media Noche Memories at The Maya Kitchen

Chef Fern Aracama

Last Saturday, my mom and I attended November's featured class - Media Noche Memories with Chef Fern Aracama at The Maya Kitchen. I first knew about Chef Fern from the culinary magazines then later on as a celebrity host/judge for the Philippine version of  Master Chef. Aside from being a celebrity chef, Chef Fern is the man behind Aracama Filipino Cuisine and is also the culinary consultant for Philippine Airlines.

Media Noche Memories at The Maya Kitchen

This event focuses on dishes one can serve for the upcoming holidays, and were inspired by dishes the chef grew up eating as well as those inspired by his travels.

Dishes prepared:

Malunggay and Cheese Dip

Malunggay and Cheese Dip
A signature appetizer at Aramaca Filipino Cuisine, this one was the local response to the well known Artichoke and Spinach Dip, using Malunggay or Moringa to replace the artichoke. A very, very easy dish to make and was mom's favorite from all the dish prepared. Will prepare this at home this week and share you the recipe on Friday.

Patatas Riojana

Patatas Riojana
A dish inspired from Chef Fern's Spanish trip. Another simple and easy dish to make, but I found the broth a little too salty for my taste. The chorizo tasted great, by the way.

Grilled Ensaimada

Grilled Ensaimada - Media Noche Style
The heartiest and the richest dish of the day... Ensaimada cut in half and turned inside out and filled with Chinese Ham, mustard, Quezo de Bola then pressed and grilled in a butter greased pan. The dish prepared for the photo shoot was a little burnt, but the dish served at the end of the event was grilled perfectly. I loved this one as it had a great balance of sweetness and saltiness.

Insalata Uva

To counter the richness of the Grilled Ensaimada, Chef Fern prepared Insalata Uva, a signature salad dish chef's old restaurant called Uva. I do love to eat salad, but I rarely prepare vinaigrette, so this was something I am thankful for. Means I can now include vinaigrette on my salad as well.

Bunuelos with Spiced Chocolate Dip

Bunuelos with Spiced Chocolate Dip
A dessert that was my favorite dish that day. It was like profiteroles, but this one's lightly crunchy on the outside and very soft and moist inside. At the demo, this was paired with a chocolate dip, but at the buffet, this was served with another dip - Dulce de Leche. The Spiced Chocolate Dip was great, but I personally loved the Dulce de Leche more.

With the Christmas coming around the corner, people are not only stressed with thinking which gifts to wrap, stress from thinking what to serve also wears us down. All these dishes were very easy to make and not only would these make the Christmas table look great, these were also great Christmas gifts to family and friends.

I am not sure if there will be a featured class this December... if there will be one, I will share details here on my blog as soon as possible.

My sister and I anticipated the opening of Manang's Chicken at SM Fairview, but it was just last Sunday that we finally got to go out and enjoy our favorite double deep fried chicken with soy garlic sauce.

It was very early to eat dinner, so I just went for the chicken and spaghetti meal. I chose the mild spicy sauce and it was a little spicier than what I remembered, and it surely went well with the slightly sweet sauce of the spaghetti. If there was one thing I was sad about, it would be the amount of serving of the spaghetti - either it was little, or I liked it so much that I ate it quite fast. I had lemonade as my drink :)

My sister got home early that morning and went to bed right after and it was already mid-afternoon when she woke up, totally not able to eat breakfast and lunch. I guess she was so hungry that she went for the two-piece chicken, also with the mild spicy sauce.

As soon as the meal was served, my sister thought the rice had a small serving. Recalling a food trip we had at Manang's Chicken late last year, the restaurant introduced a bigger rice serving and she was sad that it went back to the small rice serving. The thing was, the rice serving might be small, but they now offer unlimited rice, so the initial rice serving doesn't matter anymore... as one could have as much rice as they want.

Also, we found out that on two-piece (or more) chicken meals / packages, the customer has the privilege to choose different sauces - one opt to have a mix of the original or mild spicy or the extra spicy sauce.

Potato Chips

This is a staple whenever we eat at Manang's Chicken, and was served as soon as we placed our orders, so this became our appetizer, if I can call it that. As usual, we went for the Mayo Garlic and Cheesy Cheese dips because we just love combining these two dips for our potato chips.

Another one of my sister's usual order. She just love the contrast between the warm cake and cold sundae and the texture and the feel of the cake in the mouth.

Free Sundae Cone!

For a limited time, Manang's Chicken SM Fairview is offering free sundae cone for rice meal orders amounting more than 100 pesos, and because my sister ordered the Red Velvet Sundae, I ate the free sundae cone. Sweet!

Something sister took home. Like I said, it was early to eat dinner that time, so she decided to take home this sandwich or her to eat for late dinner. She ate this around 9pm and loved it a lot because the sauce soaked up the chicken good, the way she liked her Manang's Chicken to be.

The overall dining experience was great. As with every Manang's Chicken outlet we visited, we were treated with respect and bubbly friendliness, which made us love this restaurant more and more.

Cooking with Leftovers

Jollibee Chickenjoy Bucket Treats

Last Friday, good friends from Jollibee sent us two Chickenjoy Bucket Treats. Each bucket contained 8 pieces of fried chicken, and because it's just us three girls here at home, eating all the chicken pieces was a little overwhelming. We did send some to our next door neighbors (the essence of eating Chickenjoy is to provide joy, and I think the kids next door were happy for the treat), but we still had too much to eat. Thankfully, one of the buckets contained all breast parts, so after we ate our share of the chicken, I decided to take out all the breading and skin from the breast parts, flaked the meat, and store it in the freezer for future use.

What we did to the flaked chicken meat?


Pansit Bihon

We typically use pork for our pansit bihon, but chicken was a great ingredient for this dish, too, so for dinner, mom and I shared this bowl of noodles. I truly don't know how to cook pansit bihon, so this was my mom's cooking, and because she mixed the veggie-meat toppings to the noodles, I had to fish out several vegetables and flakes of chicken.

Chicken Sandwich

Whenever we have leftover roasted chicken, the very first thing we always do was to flake it and turn it into a sandwich spread. Typically, we just mix mayonnaise, chicken, finely minced onion, and seasonings (salt, sugar, ground pepper), but for this I also added finely chopped carrots and green bell peppers, just so we could eat carrots and green bell peppers, too! :) I didn't add any cheese to the mix to cut a little on the calorie count, but my sister would grate cheese into her sandwich before eating it.

To make the sandwich, I brushed the bread pieces with mustard, spread the chicken mix, and topped it with sliced cucumbers, tomatoes, and lettuce (I used a combination of butterhead and lolo rosso).

Empanada

One weekend morning, I turned on the television and the network was showing a replay of one of their old shows. I wasn't able to watch the first few scenes, but the show was featuring a particular province here in the Philippines, with this empanada as it's one native delicacy. I miss cooking and eating empanada, so when I saw that mom didn't use all the cabbage when she cooked the pansit, I decided to try cooking it.

Chicken Veggie Empanada
{makes 12 pieces}

Ingredients (Filling)

  • chopped cabbage
  • chopped upo (bottle gourd)
  • chicken flakes
  • water
  • little amount of oil
  • minced garlic and onion
  • salt and pepper to taste
How to Cook (Filling)
  • Heat oil in the pan and saute onion, garlic, and chicken flakes. 
  • Add the upo and cabbage and continue sauteeing it until the upo sweats. Add water as needed - you only wanted enough water to cook the veggies with less sauce as possible.
  • Season according to your preference, and set it aside to cool.
Ingredients (Pastry)
  • 1.5 cups all purpose flour
  • 1/8 cup sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 125 grams lite butter (cubed)
  • 1/8 cup cold water
  • 1 egg
  • oil for deep frying
How to Cook (Pastry)
  • In a bowl, combine all dry ingredients, including the butter.
  • Using your hands, rub the butter into the dry ingredients until it looks like crumbs.
  • Add water and egg, knead until you form a dough.
  • Dust a big wooden (clean of course) board with some flour and continue kneading the dough.
  • Flatten the dough with the help of a rolling pin.
  • If you have a dumpling maker, you can just use it to cut circle pieces of the dough. Knead the unused dough and repeat the process until you have used as much of the dough.
How to Cook (Empanada)
  • One circle dough piece at a time, add about a tablespoon of filling into the upper half part of the dough.
  • Cover the filling with the lower part of the dough and crimp the sides to seal in the filling. If you don't know how to properly do this, you can opt to use a fork to seal in the dough.
  • Using a sauce pan, heat as much oil and deep fry the empanadas under low heat. Don't overcrowd the pan as the pastry could be delicate to work with.
  • Take out the empanada pieces as soon as it turns golden brown and place it on a plate lined with paper towel to drain excess oil. 
  • Serve warm or at room temperature, whatever suits your fancy.
The recipe for the pastry, I got from BusogSarap.Com because even if my siblings and I have cooked different kinds of empanadas in the past, I wanted to make a dough with definite measurements. You can head over this site to check step by step images on how the author created her version of empanada. I used half of the recipe she originally shared because we are only three people at home, we didn't need to eat that much in one sitting and I still don't know if I will like the taste because in the past, the empanada we cooked were usually like that of Chicken Afritada (chicken, potatoes, raisins, green peas cooked in tomato sauce) or what we called "Embananas," with filling made up of mashed bananas cooked in sugar. 

I did like how it turned out. I didn't know cabbage and upo can be a great combination, and even without the chicken, it still tasted good (I created a "slave empanada" without chicken). The original empanadas I saw on the TV show didn't really use any meat, it was just a combination of cabbage and upo. If only I know from which province this was taken. Anyway, my mom said that I might have used thick dough (still had to roll it more) and it was a little hard. Well, not really hard, hard... my sister said it was actually good as is and that the butter added more dimension to the taste of the pastry, but she did agree that it needed a little softness. How to do that? I still have to figure out.

Hopefully next time I can create this with the "kaliskis" dough.

Manang's Chicken to Open at SM Fairview Soon

My sister and I just love Manang's Chicken! We do have different preferences - I love to eat my Manang's Chicken hot off the kitchen, while my sister loves to wait for hours so the chicken meat would absorb the sauce. We find ourselves craving for it every now and then, but even if the nearest branch to us is the one at the Wilcon City Center, we usually dine at either SM City North EDSA or Glorietta branches because those were the most accessible.

One weekend afternoon, my sister and I food tripped at their Glorietta branch and we had:

Fish

Manang's Fish Fillet Meal.
My meal. I wanted to try this as soon as I saw it on their menu, but it was just this moment that I finally tried it out. I love battered fish, but I usually pair it with aioli or coleslaw, so tasting this with the Manang's Chicken sauce was a great revelation. I loved the sweet-salty-spicy blend and it really went well with the soft, flaky fish and its lightly crunchy covering. Just like the sauces for the chicken, diners can opt to go with their choice of sauce - original, mild spicy, and extra spicy.

One thing we loved about Manang's Chicken, the flavors seeped through its meat, unlike the others we tasted that tasted bland on in the inside. The amount of sauce was enough... but should you want more, you can just avail for extra sauce. As for us, we buy several little cups of sauce to take home, so we could still have a taste of Manang's Chicken.

Spaghetti

Something sister and I shared. Their spaghetti won't win any awards, sure... but there is just something about their spaghetti that makes sister and I crave for it. This is marketed for the kids so it was a little on the sweet side, but instead of adding grated cheese, they added cheese sauce. Sister said it felt like eating spaghetti when we were kids... kinda like having a flashback of the past, which is maybe why we love it a lot.

Potato Chips

Another favorite at Manang's Chicken. This was the large size, which came with one dip of choice (we ordered another dip because we loved mixing the two dips together). Aside from this and the regular sized one, they also sell this by tubs (small and big). One trivia... we love this so much that we actually ordered two tubs of their chips as part of our media noche - the family shared the big tub, the small tub we gave to our neighbor so they could taste it, too.

It's been a while since we last dined at Manang's Chicken, so when I received news that they are opening a branch at SM City Fairview, we were very happy. No word yet as to exactly when it will open, but they are targeting the month of November. As soon as it opens, the girls and I will definitely visit and binge (mommy loves their Crispy Pancit, by the way), and of course share the experience here on the blog.

Bite Club Grilled Burgers (D'Mall, Boracay)

Bite Club Grilled Burger - Boracay

I may have traveled to Boracay just last June, but my short stay there didn't really allow me to roam around and try different food... so when I traveled back to Boracay last August with my mom and sister, food tripping was something new for me.

For lunch, sister wanted to eat burgers. Finding a place to eat in Boracay is both easy and difficult - easy because there are a lot of food places, difficult because choosing where to eat can be a daunting task. As for sister's burger cravings... we were lucky to have found Bite Club Grilled Burgers while walking along D'Mall.

Bite Club Grilled Burger - Boracay

The place wasn't that big, but because August was an off-peak period, finding a table wasn't difficult. One thing I liked - they had sturdy plastic chairs that allow people with wet clothes to dine in (like we were).

Bite Club Grilled Burgers offer different kinds of patties differentiated by weight. Club Burger is the classic 1/3 pound patty (165 pesos), Burgerella is the 1/3 pound patty stuffed with mozzarella cheese (185 pesos), The Bomb is the classic half pounder (260 pesos), The Bombarella is the half pounder stuffed with mozzarella cheese (280 pesos), and the Triple X is the heavy weight 1 pound patty (420 pesos).

Ordering the burgers were just easy. 1) Choose your patty and 2) Add your choice of topping (all burgers have one free topping... if you want to add more, it will charged 25 pesos per topping). All burgers come with lettuce, tomato, and special Bite Club dressing.

Sister's burger. I was the one who placed the order and because mom has senior citizen card, her order was placed separately with ours (sister and I). Sister went back to the hotel to change clothes and there might have been a slight misunderstanding because mom and I were served with burger cut in half. We were thinking maybe they saw just mom and I and took the initiative to cut the burger in half thinking we were sharing the burger.

Anyway, the blue cheese cream was divine! It tasted how blue cheese supposed to taste like, and it worked well with the burger.

My Burger

My burger. I went with two toppings because I love bacon and I want my burger with a lot of cheese. Each of the burgers (it turned out) came with cheese, so my burger was some kind of cheese bombed burger (do remember that burgerella's patty has mozzarella cheese stuffed inside).

The patty was so delicious!!! It was juicy, it was big, it had a generous mozzarella stuffing, and it tasted like how I like my burger patty should be - smoky, less salt, more of the beef flavor.

Crispy Fries

For sharing, we had an order of their Crispy Club Fries, after seeing it served at the table in front of us. It was very crispy, but a little chewy as well. I loved it the way it is, but since every table has its own set of condiments, mom and sister mixed their own dip.

Aside from Burgers, the place also offers Breaded Fish Sandwich and Tender Grilled Chicken Sandwich.

Our lunch was foodgasmic! We were glad to have made a great choice this time - with so many food places to choose from it was a blessing to have found this.
