Menu Plan Monday: Week of September 30th, 2013


Good Morning Bloggy Family!  Here we are again, another Monday.  School is in full swing now and all the after school activities are back in action.  This year I am teaching the 3rd and 4th graders at our Church's Wednesday program.  My daughter has Girl Scouts, my son has Cub Scouts.  My kids also do Karate and Soccer. Oh, I work too. It is a full plate, I know it.  Somehow we must eat, especially since eating out is not recommended.  Last time I ate at Olive Garden I was seriously contaminated, and they HAVE a gluten free menu.


Monday:
Hamburger (Bun-less for adults)
Served over a bed of lettuce, topped with onions and avocado
and horseradish Mustard


Tuesday:
Roasted Chicken Breasts, Sauteed Cabbage, Roasted Asparagus


Wednesday


Thursday:
Rosemary Chicken with  Cauliflower Rice

Friday:

Chicken and Dumplings
Cauliflower Dumplings


Saturday:
Sausage, Peppers and onions served with Saute
& White Rice for Kiddo's


Sunday:
Fried Pork Chops, Green Beans, Cauliflower Rice

Sorry I am not very  consistent around here, I am afraid my only computer is not very reliable anymore.  It keeps shutting down on me in mid project.  Anyway, it (my computer) work up this morning ready to work so here is my menu plan for the week.

Country Style Ribs, Broccoli


Wednesday:
Hamburgers (pictured here on my homemade buns)
Hubs and I eat ours wrapped in a Bed of Lettuce
Served with Caesar Salad


Thursday:

Cooked over Carrots and Onions


Friday:
Fried Pork Chops, Green Beans


Saturday:
Crock Pot FInger Lickin' Good Chicken

Sunday:
Sweet Italian Sausage, Spaghetti Squash, Spaghetti Sauce

Menu Plan Monday: Week of July 29th, 2013

Good Morning Bloggy family.  It's the second week back to school and my son is really grumpy this morning.  He definitely does not want to go.  Monday's in the real world are definitely difficult.  This week is still summer session for him.  He had a good week!  A teacher wanted to know what those noodles were he was eating every day so today I think I will send her in a pack.  We love our Thai Kitchen Instant Noodles for lunch!!!

I have a few new items on the menu this week.  Check it out!

Sunday:
Lasagna (I used by Bolognese meat sauce for that layer)

Monday:
made with Greek Yogurt, Parmesan and Spices
Steamed Broccoli

Tuesday:

Wednesday:
Hamburgers (pictured here on my homemade buns)
Hubs and I eat ours wrapped in a Bed of Lettuce
Served with Caesar Salad

Thursday:
Green Leaf Lettuce Taco Dinner


Friday:

Meatloaf (no sugar, almond flour instead of oats), Cauliflower Puree, Broccoli

Menu Plan Monday; Week of July 21st, 2013

Hey, how they heck have you all been?  Im back down to regular hours at work (6-12 a week) so I SHOULD be able to keep up with my real life.  Right?  I also recently signed up to be a sub at my daughter's school in the cafeteria and I am so super excited to get that first call to help out!!!  I can't hardly wait for her school to start back!  You know I love being in the kitchen right?  So what's not to love in the cafeteria?

Here is a shocker.  My son starts back to School tomorrow (July 22nd).  Yup, back to school lunches are going to be in full swing here at our house.  He goes to the Kipp School which is a College Prep sort of school and summer school is mandatory.  He is having issues with a few molars growing in so he selected to eat Thai Kitchen Instant Rice Noodle Soup every day in his thermos.  Making it ahead old school and sending it in.  The broth disappears but the noodles do not clump as you would think and turns out to be a nice noodle bowl for him by the time he gets to lunch. Other snacks like Nutrition Wholesome Nut Mix, Nature Valley Roasted Nut Crunch Almond Crunch and Sharkies Fruit Chews will get added along with an apple.  Not sure he will actually eat the nut products but I'll toss them in anyway.

So what's for dinner here at our house?  Slim pickings I'm afraid since I am doing a pantry cleanout! LOL...

Sunday:
Spaghetti, Sauce and Sweet Sausage

Monday
Chicken Breast marinaded in Wicker's BBQ Marinade
Sweetened with Tomato Paste, Honey and Thickened with Arrowroot

Tuesday:
Broccoli


Wednesday:
Oven Roasted Country Style Ribs

Thursday:
Rib Roast
Brown on both sides on a cast iron skillet 
and bake for 45 minutes at 350 degrees
Cauliflower Puree & Green Beans

Menu Plan Monday: Week of June 24th, 2013 (Dinners on Vacation)

Hey guys!!!  I have been working like a madwoman.  Suffering though the 100 days of hell in the Flower Business.

So the family and I are on vacation at the moment.  We are in a gorgeous cabin on the Great Smokey Mountains.  It is so incredible here.  The views are breath taking.  So...... How does Paleo Celiacs go on vacation and eat?   I did find and call a few restaurants but my big plan is the crockpot.  Yes, I have actually gone on vacation with my crockpot AND my Kruig.  LOL.  I have adapted a few of my favorite recipes on the web to be crock pot worthy.  It's not difficult really, just prep and cook in the crock instead of oven, stove top, etc.  Early in the morning, after breakfast, I plan to just toss that meal in and eat a safe dinner back at the cabin.

Menu Plan Monday: Week of April 29th, 2013



Oh my gosh, am I so tired!  My daughter had her very first sleepover last Saturday night and those girls exhausted me!  Not to mention when you are old like me, catching up sleep from an all night-er simply does not work!  You missed your chance to sleep, now you have to be tired for 3 days!!! LOL.   It was the very first sleepover for most of the girls in attendance so I hope it was memorable.  None of them seemed homesick but mainly because all the girls in attendance were very comfortable with each other (BFF's).  I left a myriad of foods out on the counter (gluten free of course)!!  We had pizzas, hot dogs, nacho's and cheese, cupcakes, cookie cakes, Italian Water Ice, Drinks with powder mix add ins.  Soon I will have to post pictures of her awesome rainbow cupcakes!  Gotta run to work, have a great week!!!


Monday:
Baked Chicken, Broccoli & Fruit Salad

Tuesday:

Wednesday:
Fried Hamsteak, Macaroni and Cheese (for kids), 
Cole Slaw and Brocoli


Thursday:
London Broil, Cauliflower Rice, Broccoli
I am going to marinade it in olive oil, a little liquid aminos, garlic and onion powders, red wine vinegar, crushed oregano, freshly-ground black pepper

Friday:
Baked garlic Shrimp, Cauliflower Puree, Green Beans

Saturday:
Meatloaf (no sugar, almond flour instead of oats), Cauliflower Puree, Broccoli


Sunday:

My Daughter's Communion Day
Luncheon includes Spaghetti, Meatballs, Caesar Salad, Bread & Butter, White Cake and NY Style Cheesecake.

Menu Plan Monday - Week of April 15th, 2013


No real time today to add links or pictures, maybe I will later on.  For now I am going to record for records sake what I plan to have before I run out to work.  By the way, I LOVE THIS JOB! :-).  Playing with flowers all day is awesome.  It is a temporary position tho and I will be sad when it goes.

Monday:
My Baby Girl's Birthday
We are going to take her out to eat!
Making Against All Grain's Strawberry Cake

Tuesday:
Hamburgers
served with Lettuce, Tomato, Red Onion and Avocado

Wednesday:
Dinner at Church

Thursday:
NY Strip Steaks, sauteed mushrooms, broccoli



Camping Menu:


Breakfast:
  • Pancakes (batter premixed)
  • Eggs (pre-scrambled) and toast

Lunch:
  • Sandwiches on Udi's Bread
  • Chili and Foil Packet Potatoes

Dinners:
  • Oscar Mayer Beef Hotdogs grilled over an open Fire (bun-less, just like my kids like it)
  • Chicken marinaded in Italian Dressing and Veggies
  • Hobo Packets (Ground Beef and Veggies cooked over a fire)
  • Foil Packet Potatoes is a side for breakfast or dinner

Desserts
  • Skillet Apples (apple pie in a jar cooked in a skillet) 
  • Hobo Pies (Udi's Bread with Apple Pie filling)
  • Roasted Marshmallows with Home Made Graham Crackers

Snacks:
  • Enviro Kids Chocolate and Peanutbutter bars
  • Carrot Sticks with Ranch Dressing 
  • Old Wisconsin Meat Sticks
  • Trail Mix Crunch (nuts and dried fruit)

Menu Plan Monday: Week of March 25th, 2013


The Easter Edition


Wow, where the heck does the time go.  As if being a college student with school aged kids with food allergies was not busy enough, I picked up some local work to add to the mix.  Somewhere in all this mess I need to find time to do my schoolwork, housework, blogging, baking and cooking and now Easter Prep.  I need an assistant!

As usual, I have big plans for Easter.  My whole family will be here with the exception of one niece and of course my dearly departed brother (RIP brother Bob!!).  Add to that the complication of a Celiac child allergic to corn. Its extremely difficult for for the corn free kid to enjoy candy.  In my mind, kids should get to enjoy candy on Easter!!!!  I decided I will make him candy.  This sounds HUGE I know but I have actually made large chocolate candy shop quality Easter eggs before in my lifetime so I already have the moulds and such.  It is time consuming, however and time is one thing I have very little of.  Regardless, it will happen even if I have to stay up until midnights!!  I have planned out my week time wise just like I do with my menu's.  That hour long wait in the pickup line at the kids school I plan to read my history book.  I will get up at 4 am each day to work on stuff, etc, etc.  You get the idea.

This year I will have to craftily plan Easter brunch to be ready as soon as we are done church. Everything that can be made ahead will be.


Jello Jiggler Moulded Eggs served with heavy whipped cream

Coconut Sugar Ham (roasting on very low while at Church)
Using an old fashioned pineapple brown sugar recipe and using coconut sugar instead.

Make Ahead Mashed Cauliflower (in the Crock Pot)

Using Dukes Mayo and horseradish mustard

(Strawberries, blueberries, grapes, banana, pear)
My plan here is to mix up some fresh fruits 
and dress with pineapple juice, a dash of lemon, honey and some coconut creme.

Saturday:  Pizza and Salad
