Thinking about getting a head start on your holiday baking?  How you store your made ahead cookies for the holiday is probably a matter of experience.  I have read a few different methods over the years.  I personally like to make the cookie dough up ahead of time and freeze until baking day .  In my opinion, a fresh baked cookie ROCKS!  I will either shape the dough into disks for roll out cookies and freeze, drop cookies onto a baking sheet, freeze and bag, or just roll dough out into a tube to slice and bake later.  Make sure to wrap your dough well.  Defrost in the refrigerator overnight.  Follow recipe according to directions for that particular cookie.

Roll Out Butter Cookies

These are more than your ordinary roll out cookie!  The magical combination of ingredients make this buttery good with an incredible texture.  It is now my GO TO cookie for any occasion.  They keep their shape nicely.  Not too kept tho, as I have found that cookies with sharp edges are too dry.  Not these cookies!  You can both see what you cut out as well as enjoy the buttery goodness.



1 cup (2 sticks) Butter, Room Temperature
1 cup Sugar
1 Egg
1 tablespoon Vanilla
1/2 teaspoon Almond Extract
1/2 teaspoon Salt
1 teaspoon Baking Soda
1/2 teaspoon Cream of Tartar
1 teaspoon Xanthan Gum
1-1/2 cups Brown Rice Flour (Superfine)
3/4's cup Arrowroot (or Potato Starch)
3/4's cup Tapioca Starch (also called Tapioca flour)
2 Tablespoons Vanilla Flavored Instant Pudding

Preheat oven to 400 degrees.

  • Cream together butter and sugar until light and fluffy. This is an important step, don't rush it!
  • Add egg, vanilla, almond extract. Mix until fully incorporated. 
  • Add dry ingredients (salt, tartar, gum, flour, pudding) to a small bowl off to the side and mix well. 
  • Add to wet ingredents and mix until dought JUST starts to putt together.  If you squeeze dough together with your hands, it will hold onto its shape. 
  • Spilt batter into two balls. Roll out batter between two parchment papers to a 1/4's inch thickness.  alternatively I will sometimes cut my shapes out first and then chill the cookies on the sheet.
  • Chill batter for 10 minutes
  • Take batter out from fridge and cut into shapes.  
  • Promptly put into preheated oven and bake for 10 to 12 minutes.
  • Allow to rest on baking sheet for 5 minutes before transferring to a cooling rack.


Bake for 8 to 9 minutes.

Primal Chocolate Chip Cookies

Why primal?  Because I am using regular chocolate chips.  Well, Enjoy Life mini chips to be exact.  So with all that regular sugar in those chips.....they are not exactly Paleo, right?  LOL.  We like our 85% dark chocolate here and I am sure it would be good in cookies, its just not traditional is all.  So this is how I am making them, OK?  But go ahead and get those dark chocolate chips and call them paleo if you want! :-)



1/4 cup Butter (grass fead), room temperature
1 Egg
4 Tablespoons Honey
1 Tablespoon Vanilla
2 cups Almond Flour (note)
1/4 teaspoon Salt
1/2 teaspoon Baking Soda
1/2 cup Small Chocolate Chips


Preheat oven to 350 degrees
  • In a Stand mixer with whip attachment (or with a hand held mixer) whip butter on medium/low until smooth and creamy.
  • Add egg and whip until fully incorporated.
  • Add Honey and vanilla and whip until just incorporated.
  • Add dry ingredients and fully combine.  
  • Scoop cookie dough out with your large sized cookie scoop and place a ball of batter onto cooking sheet.
  • Flatten cookie with your slightly wet or oiled palm to shape you desire your final product.
  • Bake for 9-10 minutes for larger cookie or 7-8 for smaller cookies.

Note:
Honeyville is the finest ground almond flour.  This really is true!  It is  not really the expensive either, however, its not always convenient for me to have.  I am using Bob's Red Mill almond flour and grinding it finer by placing it in my coffee bean grinder or sometimes my blender and processing it for about a minute.  Careful not to over do it or it will turn into butter!!!

Paleo Snickerdoodle Cookies

After seeing Snickerdoodles at a party I knew immediately I had to come home and bake some.  You see, I never actually ate one before and I was dying to know what they were like.  So I went home and did a search.  OK so if you want to bake a paleo snickerdoodle it seems you will just have to buy the book.  Eventually I may buy the books, but for right now I wanted a cookie.  Soooo, I took a friends suggestion and twisted up another cookie recipe.  Here is our version, being posted now out of request!!  It really turned out good and my kids ate these up before the chocolate chip!


Cookie Dough
1/4 cup Butter (grass fead), room temperature
1 Egg

4 Tablespoons Honey
1 Tablespoon Vanilla

2 cups Almond Flour (note)
1/4 teaspoon Salt
1/2 teaspoon Baking Soda

1/2 teaspoon Cream of Tartar
2 teaspoons Cinnamon

Coating

1 Tablespoon Coconut Sugar
1 Tablespoon Cinnamon


Preheat oven to 350 degrees
  • In a Stand mixer with whip attachment (or with a hand held mixer) whip butter on medium/low until smooth and creamy.
  • Add egg and whip until fully incorporated.
  • Add Honey and vanilla and whip until just incorporated.
  • Add dry ingredients and fully combine.  
  • Meanwhile, place on smallish sized place the coating ingredients.
  • Scoop cookie dough out with your large sized cookie scoop and place a ball of batter onto coating place.  
  • Roll cookie around in topping and place on cooking sheet.
  • Flatten cookie with your slightly wet or oiled palm to shape you desire your final product.
  • Bake for 9-10 minutes for larger cookie or 7-8 for smaller cookies.

Note:

Soft and Chewy Gluten Free Oatmeal Cookies

Didn't we have enough of the cookie gig at Christmas?  Well the truth is we do not purchase our cookies around here  The only prepackaged  cookie I can find around here is the vanilla cream with vanilla cookie sandwich and my children do  not like those!  It's okay, whipping up a batch of cookies is easy peasy!

My oh my oh my do I ever love oatmeal cookies.  The first ever gluten free batch of oatmeal cookies I ever made were spread across the pan with NO structure  The second batch had to be hand flattened!  LOL  These cookies are just right and oh so good! Plump but not too plump.  Soft but not so you can't hold them in your hand without falling apart.  They have Just the right amount of chewy.  If you like them crunchier no problem.  Just cook them longer.

This happens to be the recipe posted (for the most part) in my son's Cub Scout book.  It also happens to be the recipe (for the most part) inside the Crisco wrapper.  I suppose the recipe for oatmeal cookies have not changed much over the years.  I converted these recipes to accommodate my favorite gluten free flour blend and it works out great!  They taste so good, nobody at Cub Scouts even suspected that they were Gluten Free!


3/4 cup Shortening
1 cup Brown Sugar
1/2 cup Granulated Sugar
2 eggs
1/4 cup Almond Milk (or water)
1 Tablespoon vanilla
1-1/4 cups Gluten Free Flour Blend
1/2 teaspoon Xanthan Gum
3 cups uncooked Oatmeal, pulsed a few times in the food processor (gluten free certified)
1 cup uncooked Oatmeal (not chopped)
3/4 teaspoons Baking Soda
1 teaspoon Salt
1 teaspoon Cinnamon
1 cup baking Raisins (or regular soaked in 1/4 cup hot water to plump them back up)

Preheat oven to 350 degrees.

  • Beat together the Butter and sugar until creamy.
  • Add eggs, milk/water, vanilla and combine until creamy.
  • Combine the remaining ingredients and mix until fully incorporated.
  • Scoop out and drop onto ungreased cookie sheet.
  • Bake for 15 minutes for larger cookies, 10 to 12 for smaller (tablespoon) sized cookies.
  • Cool for 2 minutes on cookie sheet and transfer to a backing rack to continue cooling.
  • Enjoy!

Gluten Free Peanut Butter Blossoms

I will never forget the first time I ever ate these.  A neighbor who I barely knew showed up at my door Christmas Eve with a box full of wonderful home made cookies.  It is something commercials are made of right?  I just moved in and had two babies.  No way I was getting any baking done of my own.  I had honestly never ate a Peanut Butter Blossom before this.  What a nice surprise!

If you ever make them, be sure to eat one while the kiss is still melted.

 

1 1/4 cups Brown Sugar
1 cup Peanut Butter
1/2 cup Butter
2 Eggs
2 cups Flour Blend
1/2 teaspoon Xanthan Gum
1 teaspoon Bakin Soda
1/2 teaspoon Salt
1 1/2 cups Peanutbutter Chips
Chocolate Kisses
 

Pre-heat oven to 375 degrees.
Line baking sheets with Parchment.
  • Cream together sugar, peanut butter, and butter until light and fluffy.
  • Add eggs and fully incorporate.
  • Add in flour blend, gum, soda and salt. Blend on low speed until batter pulls together.
  • Gently mix in peanutbutter chips.
  • Scoop out tablespoon sized portions and roll into a ball.  Press gently down on cookie sheet and bake for 8 minutes. 
  • Add a chocolate kiss gently onto the middle and bake fore 2 more minutes.
  • Remove from oven and allow to cool. 
  • Enjoy while kiss is still melty.

Molasses Cookies

The birth of this wonderful new recipe is a result of a Gluten filled recipe I found over at Home Joys.  I did not go with my straight home made gluten free flour blend this time.  I added some Sorghum flour, which ordinarily we do not prefer.  I did this becuase Gina used all whole wheat flour making what I thought would be a more dense cookie.  I am not actually sure that what I ended up with was what it was supposed to be copycat wise, but man was it GOOD!  VERY GOOD!  My son's initial reaction was how in the world can this be good for you if it tastes so good.  I told him that that the molasses increased the nutrition in this recipe. Blackstrap molasses is a great source of calcium, magnesium, potassium, and iron.  All those wolderful things Celiacs and children both could use a little extra of. 

I rolled the cookies in a mixture of light and dark brown sugar and placed them on a Silicon Mat.  Once cooked the sugar created a wonderful little crunch coating the soft cookie inside.  The combination is heavenly!


3/4 cup Butter, softened
3/4 cup Brown Sugar
1/2 cup Molasses
1 eggs
2 teaspoons Baking Soda
1/2 teaspoon Salt
1/2 teaspoon Cloves
1/2 teaspoon Cinnamon
1/2 teaspoon Ginger
2-3/4 cups Gluten Free Flour Blend
  (I used)
  - 1 cup Sorghum
  - 1 Brown Rice Flour
  - 1/2 cup Tapoica Starch
  - 1/4 cup Potato Starch
  - 1 teaspoon Zanthan Gum

Preheat oven to 370 degrees.
  • Cream together butter and sugar until light and fluffy.
  • Add Molasses and egg and mix until fully incoroprated.
  • Stir together dry ingredients (soda, salt, cloves, cinnamon, ginger, flours & gum) until fully mixed.
  • Add dry ingredients to the wet ingredients in mixing blow and mix until fully incorporated.
  • Chill in refrigerator for about 10 minutes.
  • Drop by tablespoons full into a bowl of Dark Brown Sugar.
  • Place on baking sheet about 1-1/2 inches apart.
  • Bake on 370 for 9 minutes.

    Gluten Free Butter Cookies or Cookie Press Butter Cookies

    The children at my daughter's class said these were the best cookies they ever ate.  First graders only tell the truth you know!  This recipe is basically an enhanced and converted to be Gluten Free version of a timeless classic.  I am not re-inventing the wheel here, just converting it to be Glutne Free. 
    No need for a special gluten free Spritz cookie recipe here. I was in a mad rush the day I created this and did not want to mess every counter in the house so I added 1/4 cup more flour and added the batter to the cookie press.  Voila, it worked and it was incredible.  Reminds me of the cookies you buy in the blue tin at the holidays.

    1 cup (2 sticks) Butter, Room Temperature
    1 cup Sugar
    1 Egg
    1 teaspoon Vanilla
    1/2 teaspoon Almond Extract
    1/2 teaspoon Salt
    1 teaspoon Baking Soda
    1/2 teaspoon Cream of Tartar
    1 teaspoon Xanthan Gum
    2 3/4's cup Gluten Free Flour Blend

    Preheat oven to 400 degrees.
    • Cream together butter and sugar until light and fluffy.
    • Add egg, vanilla, almond extract.  Mix until fully incorporated.
    • Add dry ingredients (salt, tartar, gum, flour) to a small bowl off to the side and mix well.
    • Add to wet ingredents and mix until dought JUST starts to putt together and looses a bit of its sticky nature.  You will want to add one tablespoon of flour at a time at this point to achieve the texture you are looking for.  Every climate is different and may need more or less.
    • Chill batter for 10 minutes either before adding to the press or after the cookes are pressed out into shapes onto the cookie sheet. 
    • Add to cookie press and press cookie shapes DIRECTLY onto baking sheet.  A parchment will not work for this type of cookie.
    • Bake for 8 to 9 minutes.

    Gluten Free Gingerbread Men Cookies

    These cookies are a tad soft. Not too soft though, still keeps its crisp bite.  I made 75 of these for our Cub Scouts Christmas party this year.  I was too exhausted and lacked motivation to put the decorations on it so I picked up a can of spray frosting and set it next to to the tray.  Nobody knew they were gluten free and loved the spray frosting idea.  The dough is rather sticky still and it is difficult, once the cookie was pressed into shape, to to remove the shaped cookie safely.  I ended up cutting a cookie and flipping the oiled parchment over a bit so the cookie would fall onto my hand.  Then I safely placed them on the cookie sheet. 

    Make them up, take some spray cans of frosting with you to decorate them and have a cookie decorating party.  The kids will LOVE it! Happy baking!

    2 1/2 cups Gluten Free Flour Blend
    1 teaspoon Xanthan Gum
    2 teaspoons Ginger
    1 teaspoon Cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon Salt
    1 teaspoon Baking Soda
    1/2 teaspoon Cream of Tartar
    1/2 cup (1 stick) Butter, room temperature
    1 cup Brown Sugar
    1/4 cup Molasses
    1 Egg
    1 teaspoon Vanilla

    Preheat oven to 350 degrees.
    Line baking sheets with Parchment Paper.
    Line Counters with Parchment Paper sprayed with Olive Oil.
    • Mix dry ingredients (flour, gum, ginger, cinnamon, nutmeg, salt, soda and tartar) in small bowl and set aside.
    • Beat butter and brown sugar in large bowl with electric mixer on medium speed until light and fluffy. Add molasses and egg and beat well. Gradually beat in flour mixture on low speed until well mixed. Press dough into a thick flat disk. Wrap in plastic wrap. Refrigerate for an hour.  Sometimes I skip this step, its harder to work with the dough but still do able.
    • Roll out dough to 1/4-inch thickness on lightly oiled parchment paper.  An oiled marble rolling pin works well here.
    • Cut into gingerbread men shapes with 5-inch cookie cutter.
    • Place 1 inch apart on ungreased baking sheets.
    • Bake 9 minutes or until edges of cookies are set and just begin to brown.
    • Cool on baking sheets 1 to 2 minutes. Remove to wire racks; cool completely.
    • Decorate cooled cookies as desired.
    • Store cookies in airtight container up to 5 days.
    Use Royal Icing Recipe here to decorate.
    Notes:
    1. Make sure your butter is ROOM temperature. Otherwise the resulting chunks of butter will cause a dimpled surface.
    2. Make sure your dough is mixed throughly to incorporate all ingredients.
    3. Dough is extremely sticky to work with. If you are skipping the refrigeration part (helps with stickiness of dough) you will either have to use lots of flour on your surface and rolling pin or use an oiled piece of wax paper to roll your dough out on.

      Gluten Free Christmas Cookie Recipes

      It is Christmas Week.  This is the week we take the time to bake our cookies.  Christmas Eve we will deliver some to unsuspecting neighbors! Choosing what cookies to bake is so difficult though.  There are so many wonderful gluten free cookie recipes out there.  Just check out Gluten-Free Cookie Swap on Facebook and see for yourself.  Currently my Pink Shortbread cookie is in the lead, but not beucase it is the best receipe on that page.  Not by a long stretch.  I simply have the very best friends ever who took it upon themselves to help me win this contest.  I have had some tough times this year, nothing I can't handle of course, but I could really use the prize and these girls knew that.  Thank you ladies, you know who you are!!!  Could you click on that link and

      Gluten Free Mint Chocolate Chip Cookies

      The idea for this cookie originated from the Gluten Version over at Betty Crocker.  I wanted to see if a cake mix would do in place of the pre-packaged cookie mix.  It did.  The tint is not really necessary but we tinted these cookies green so they would be festive for Saint Patricks Day!  That and the fact that they look and taste JUST LIKE the ice cream.  Man, were they good.  Only two made it though the night from the whole dozen and a half batch.  Now THAT is a good cookie!  I am thinking next time to add some frosting between two cookies to make a sandwich.  The best part is they taste just like a Girl Scout Thin Mint cookie.  Just close your eyes and bite into the cookie and recall just how good they were!  :-)


      1 box (15 ounces) Yellow or White Gluten Free Cake Mix
      1 Tablespoon Vanilla Instant Jell-O Puidding
      1/2 cup (1 stick) Butter or Margarine, room temperature
      1/4 teaspoon Mint Extract
      7 drops Green Food Color
      1 egg
      1 cup Creme De Menthe baking chips


      Preheat oven to 350 degrees.
      Like Baking Sheet with Parchment Paper.
      • In bowl of stand mixer, add mix, butter or margarine, extract, food coloring and egg.  
      • Mix until incorporated.  Batter will still be very crumbly.
      • Take bowl off mixer and continue to kneed batter with your hands until mix just starts to stay together on its own.
      • Add baking chips and mix well, again with your hands.
      • Using a tablespoon, drop dough onto parchment paper lined baking sheet 2 inches apart.
      • Flatten balls of dough slightly.
      • Bake for 11-12 minutes or until set.
      • Cool 3 minutes on baking sheet.

      Chocolate Chip Roll Out Cookies

      This cookie is basically a roll out textured cookie with chocolate chips inside.  My plan is to decorate the tops with red royal icing and send them into school for Valentines day.  Considering they have no baking soda or powder in them at all, I was pleasantly surprised at how nice they turned out texture wise.  Not too chewy, not too dense.  They turned out to be a very nice cookie indeed.  We have tried them out on several "wheat eaters" so far and none of them could tell the difference!  And I'm telling ya, if they could they would tell me for sure.

      This recipe idea was adapted from a recipe originally given to me by Loren at The Baking Sheet who found it over at The Sweet Adventures of Sugarbelle.  If you have not already visited them, you really should.  They are cake and cookie decorating genius!



      1 cup Butter, room temperature
      1/3 cup Sugar
      1/2 cup Brown Sugar
      1 egg
      2 teaspoons Vanilla
      2 3/4 cup Flour Blend *
      2 teaspoons Xanthan Gum
      1 Tablespoon White Chocolate Pudding Mix
      1/2 teaspoon Salt
      1 1/2 cups Mini Semi Sweet Chocolate Chips


      • Cream Butter and Sugar until well combined.
      • Add Egg and Vanilla and beat on low 1 additional minute.
      • Add Flour, Gum, Pudding and Salt and mix until completely incorporated.
      • Add Chips to the bowl and mix a bit by hand.
      • Take batter and turn it onto a piece of parchment paper and continue to combine gently by hand.
      • Roll out batter to into a 1/2 inch thick sheet cut into shapes.
      • Place shapes on parchment lined baking sheets and chill for 30 minutes.
      • Meanwhile, pre-heat oven to 350 degrees.
      • Once chilled, bake cookies for 12 minutes.  Cookies will not brown on top but will be slightly brown on the bottom.
      • Top with Royal Icing!
      * My preferred GF flour blend is:
      4 parts Tapioca, 
      2 parts Superfine Brown Rice Flour & 
      1 part Potato Starch.

      Gluten Free Shortbread Cookies

      I remember well how much my daughter loved those Shortbread cookies you would buy at Walmart.  You know the ones immediately to your right as you walked though the threshold.  Those cookies would torment her when we first went Gluten Free.  She would often ask me to make them for her.  I promised her when she first went gluten free that I would copy anything she missed and a deal is a deal!  Right?

      These wonderful little cookies melt in your mouth just like a good shortbread cookie should.  They also keep the same exact shape you cut them into which makes them a great candidate for a royal icing decorated birthday cookie.  I brought them into her class one day and the children LOVED them!  They were a real hit.  Im am sure your family will love them as well! ;-)


      1 cup (2 sticks) Butter, Room Temp
      1/2 cup Powdered Sugar
      1 egg
      1 teaspoon vanilla
      2 1/4 cups Flour Blend
      1/4 teaspoon Salt
      1 teaspoon Xanthan Gum

      • Beat the butter and sugar until smooth and creamy (about 1 minute, do not over mix).
      • Beat in the egg and vanilla (just a quick spin until egg is incorporated).
      • Gently hand stir in the flour, salt and gum (mix until just incorporated).
      • Flatten the dough into a disk shape, wrap in plastic and chill for at least an hour.
      Once Chilled:
      • On a lightly floured surface or between to sheets of oiled plastic wrap, roll out dough into a 1/2 inch thick circle.
      • Cut out into desired shape using a cookie cutter dipped in flour.
      • Place onto parchment lined baking sheet and place into refrigerator for 15 to 20 minutes.
      • Pre-heat oven to 350 degrees.
      • Take out of refrigerator and place into preheated oven.
      • Bake for 15 minutes (cookies will not brown).
      • Cool completely on wire wrack.
      • Top with frosting or Royal Icing.
      • Enjoy!

      Italian Almond Cookies

      This year was our first ever Gluten Free Christmas here at our household.  When considering cookies for this occasion, instead of trying to re-invent the wheel, I decided to search out cookies that were already gluten free (not requiring flour).  This Italian Almond cookie topped my list.  Why, well because my side of the family is Italian of course!! :-).  I was not sure how well this cookie would go over though and a bit nervous making them.  I was pleased to see my son sneak one off of the tray I was getting ready to photograph for this post.  I giggle just thinking back about it.  He says, "Mom these are good."  Yay!



      I have heard folks put almond slivers in them, roll them or top them in ground almonds.  It makes for a really nice touch.  And then I seen a recipe over at GF Homemaker that adds Cherries.  I tried that too, very good!!!

      2 1/4 cups Whole Almonds
      2/3 cup Sugar
      2 large eggs
      1 teaspoon baking soda
      1/3 cup Butter, room temperature
      1/4 teaspoon Salt
      1/2 teaspoon Almond Extract
      1/2 teaspoon Vanilla Extract


      • Combine almonds and sugar in a food processor.  
      • Pulse and puree until you achieve a fine powder (just before butter).
      • Add eggs to mixing bowl and beat until fluffy.
      • Add almond/sugar puree, soda, butter, salt and extracts.  Mix until incorporated
      • Scoop dough out in tablespoon or cookie scoop measure ont baking sheet leaving 1 to 1-1/2 inches apart.
      • Bake at 350 degrees for 15 minutes.
      • Cookies will achieve a thin wafer 2 inches in diameter that is surprisingly chewy yet crispy.  


      Later on, I added 1 cup of flour and 1 teaspoon of Xanthan Gum so I could achieve a puffier cookie.  Any old flour blend will do.  It takes from the pure almond flavor of the original but a softer cookie results.  Noticed I tried adding dried cherries in this softer cookie.

      Gluten Free Wedding Cookies - Snowball Cookies - Mexican Wedding Cake Cookies

      I just bit into the best tasting cookie I ever ate. It has been so long since I ate one of these cookies, I almost forgot just how much I enjoy them.  I can recall the very first time I ever bit into this type of cookie.  It was being called a Wedding Ball by its creator.  I had never even seen this sort of cookie before. It exploaded in my mouth then melted away. The lingering taste of butter and pecans remained leaving me thinking I just ate a tiny piece of heaven.  No doubt, it is my all time favorite cookie.

      I have since come to learn that this type of cookie goes by many names.  Wedding Cakes, Wedding Balls, Mexican Wedding Cookies, Russian Tea cakes, snow balls.  I believe the list goes on and on. 

      The recipe I am using here is the recipe I used way back when, before we were Gluten Free.  I have made them gluten free by simply using a gluten free flour blend and some Xanthan Gum.  The remaining ingredients remained the same and the cookies turned out just fine FABULOUS.



      1 cup Butter, room temperature
      1/2 cup Powdered Sugar
      2 teaspoons Vanilla
      1/4 teaspoon Salt
      2 cups Flour
         (1 c sorghum, 1/2 cup Tapioca, 1/2 SF Brown Rice & 1 teaspoon Xanthan Gum)
      1 cup chopped Pecans

      1 cup Powdered Sugar (to roll cookies in)

      • Add Butter, Sugar, Vanilla and Salt to mixing bowl.  
      • Whip for several minutes until throughly incorporated.
      • Add Pecans and Flour and beat for a minute more.  You may need to hand mix to fully incorporate.
      • Using a tablespoon or a cooking scoop, scoop out dough and roll into a ball (like you are rolling meatballs).
      • Place directly on baking sheet and cook at 350 degrees for 8to 10 minutes.  Cookies will not turn brown, just brown slightly on the bottom.  (Cookies should keep their round shape.)
      • Remove from oven and roll in powdered sugar as soon as you can handle them.  (Use caution when rolling in brown sugar. If you squeeze them too hard they will crumble. This improves while cooling but then the sugar wont stick.)

      Lemon Meringue Cookies

      I had a few leftover ingredients from my various experiments and needed a quick dessert idea.  I have seen this done as a flat cookie before and had it in mind to try this for quite some time now but it seemed like too much trouble. It is a bit much to do considering the three different components.  But I had the sugar cookie dough in the fridge, same with the curd.  But it could just as easily be done with store bought cookie dough and jarred lemon curd. 


      1 Batch of Meringue

      Sugar Cookie Dough:
      21 ounce Vanilla Cake Mix (I used this because I had tons of it)
      1/4 cup Additional Flour Blend
      1 cup Butter flavored Crisco
      1/2 cup Butter Flavored Shortening
      1/4 cup Sugar
      2 Whole Eggs
      1 Egg Yolk
      1 teaspoon Vanilla
      1 teaspoon Baking Powder
      1/2 teaspoon Salt

      Lemon Filling:
      3/4 cup granulated sugar
      2 tablespoons cornstarch
      1/8 teaspoon salt
      3/4 cup cold water
      2 egg yolks, slightly beaten
      1 teaspoon grated lemon peel
      Juice of medium lemon
      1 tablespoon butter or margarine

      Meringue:
      3 Eggs
      1/4 teaspoon Cream of Tartar
      1/4 cup Sugar

      • Preheat oven to 350 degrees.
      • First make Lemon Curd.  In a small saucepan, combine sugar, cornstarch and salt. Gradually add water and whisk until well blended. Whisk in egg yolks, lemon peel and lemon juice. Cook over medium heat, whisking constantly; until thick and bubbly. Boil one minute; remove from heat. Stir in butter. Chill in refrigerator until ready to use. You, of course, could use prepared store bought filling as well.
      • Add cookie dough ingredients in a mixing bowl and blend until well combined.  Press unbaked cookie dough into small sized cupcake pan leaving space to form a pie crust.
      • Spoon cooked and cooled Lemon Curd filling into mini pie crusts.
      • Place meringue ingredients into mixing bowl and beat to firm stiff peaks.  Place meringue into piping bag.  Swirl over top to cover Meringue.
      • Bake at 350 degrees for 10 - 13 minutes.

      Gluten Free Cowboy Cookies

      I received this recipe attached to a gift jar at a holiday exchange.  We are Gluten Free so we could not use the blend provided. Looking at that jar on my counter and not being able to try that cookie was taunting me!  LOL.  I decided to try the recipe out with my favorite gluten free flour blend. They turned out wonderfully!!!!  I am so pleased at how nicely the cookie recipes are converting to Gluten Free.

      This was my first time having a chocolate chip in a cookie with oats. The combination of oats and chocolate chips was just heavenly.  I always heard of making oatmeal cookies with chocolate chips instead of raisins but never ever tried them that way.  I think these are called cowboy cookies because the turn out to be a hearty cookie.  Just what you would expect a cowboy to eat.



      1/2 cup Butter (room temperature)
      2 Eggs
      1 teaspoon Vanilla

      1 1/2 cups Flour Blend
      1/2 teaspoon Xanthan Gum
      1 1/3 cups rolled oats (make sure they are labeled GF)
      1/2 cup packed brown sugar
      1/2 cup white sugar
      1/2 cup chopped pecans
      1 cup semisweet chocolate chips
      1 teaspoon baking powder
      1 teaspoon baking soda
      1/4 teaspoon salt

      1. Preheat oven to 350 degrees and line cookie sheets with or parchment paper.
      2. In a medium bowl, mix together 1/2 cup butter , 2 eggs, and 1 teaspoon of vanilla.
      3. Stir in the remaining ingredients. You may need to use your hands to finish mixing.
      4. Shape into walnut sized balls.
      5. Place 2 inches apart on prepared cookie sheets.
      6. Bake for 11 to 13 minutes in the preheated oven.

      Soft Cake Like Sugar Cookies

      These cookies are soft and yummy.  My one biggest challenge of baking gluten free cookies was  making my sugar cookies so they did not get too crunchy.  I actually took a poll on my Facebook page to see what the most popular preference was.  It was chewy by a landslide.

      Problem #1:
      Every gluten free cookie and gluten free sugar cookie recipe I tried to date resulted in a crunchy cookie.  Like ginger snap type crunch.  They were good tasting cookies but I'm on team chewy cookie!!!

      Problem #2:
      I need them to end up resembling the shape I am cutting them into (for the kids sake) and not result into a soft puffy blob (which are good to eat, but not to decorate).

      I decided to go a different route in my pursuit of a good sugar cookie and use a regular gluten filled recipe instead and use some of the tips I looked up in the back of my cook books.  I started with the recipe that came with the cookie cutter I ordered from CopperGifts.com.

      I used a sword cookie cutter in honor of my son's Black Belt Birthday.  By frosting these cookies with a Royal Frosting, they allowed this larger sized cookie to be more stable and not fall apart during transport.  I gave these as hand outs at my son's birthday.  I simply placed them in a Cello bag decorated with a nice ribbon.  They were a HIT!

      Below you will find the recipe I ended up with.



      21 ounce Vanilla Cake Mix (I used this because I had tons of it)
      1/4 cup Additional Flour Blend
      1 cup Butter flavored Crisco
      1/2 cup Butter, room temperature
      1/4 cup Sugar
      2 Whole Eggs
      1 Egg Yolk
      1 teaspoon Vanilla
      1 teaspoon Baking Powder
      1/2 teaspoon Salt

      • Gently mix butter and sugar, beating until light and creamy.
      • Beat in eggs and vanilla.
      • Add baking powder to cake mix and add 1 cup at a time.
      • Beat until completely blended.
      • Divide dough in half.
      • Roll out cookie dough between 2 sheets of parchment paper. 
      • Use a rolling pin (with spacer rings if you have it to get perfect spacing) roll out to 1/4 inch thick layers.
      • Continue rolling remaining dough between parchment paper.
      • Place in stacks on a cookie sheet, cover with foil.  
      • Chill dough overnight or 1 to 2 hours at a minimum.
      • Remove one sheet of the dough at a time and cut into shapes.
      • Bake on baking sheet at 350 degrees for 10 to 12 minutes and edges start to brown slightly.
      • Makes a dozen cookies

      And because my sole purpose in life is to save you from having the aggravation of trying to figure this out for yourself like I did, here are some hints and some trouble shooting techniques for cookies that I found from various sources, including Joy of Baking. The tips below will help you achieve the cookie YOU desire.

      Flat
      If you want your cookies on the flat side, you can do some or all of the following things: Use all butter, use all-purpose flour or bread flour, increase the sugar content slightly, add a bit of liquid to your dough, and or bring the dough to room temperature before baking.

      Puffy
      If you like your cookies light and puffy, try some of the following tricks. Use shortening or margarine and cut back on the fat, add an egg, cut back on the sugar, use cake flour or pastry flour, use baking powder instead of baking soda, refrigerate your dough before baking.

      Chewy
      If chewiness is your desire remove the cookies a few minutes before they are done, while their centers are still soft and not quite cooked through. The edges should be slightly golden but the middle will still look slightly raw. Use brown sugar or honey as a sweetener. Try using egg yolks instead of whole eggs. This will add some extra moistness to the cookies thus helping to be a bit more on the chewy side.

      Crispy
      For crisp and crunchy cookies, bake your cookies a few minutes longer than suggested and immediately remove them to a wire rack to cool. Cookies made with all butter and high amounts of white sugar will also crisp quite nicely. Another trick is to use bread flour.

      Common Cookie Problems

      Cookies brown too quickly 
      The oven is too hot or baking pans are a dark color. Try baking at a lower temperature, longer or use heavy gauge aluminum baking sheets.

      Bottom of cookies brown too quickly
      Same as above, or the oven rack is too low, or too much sugar is in the cookies.

      Top of cookies brown too quickly and bottoms are not cooked
      The rack is too high in the oven

      Cookies spread too much
      The dough is too soft - refrigerate for 15 minutes; warm baking sheets were used; too much butter, oil, or margarine was used - try using a 50/50 mix of shortening and butter.

      Cookies do not bake evenly
      Your cookie sheet may be warped or the temperature throughout the oven is not even.

      Gluten Free Gooey Butter Cake Cookies

      The original purpose of this cookie recipe was to create a copy cat recipe of a cookie I used to enjoy at a Memphis location of McAllisters Restaurant. Its not a chain-restaurant recipe though. I only ever found them served at this one particular location and they were so good. They are so incredible, soft and tender and buttery.   The recipe you see here is a gluten free version of the original.  You can find the original recipe I made at my friend Alison's place here.

      1 Egg
      1 box of Betty Crocker Gluten Free Yellow Cake mix
      1 Tablespoon J-ello Vanilla Instant Pudding
      1 8-ounce Cream Cheese, softened to room temp.
      1 stick (1/2 cup) butter, softened to room temp.
      Powdered Sugar for rolling

       Preheat oven to 350 degrees.
      • Mix ingredients well. 
      • Dough will be very sticky at this point. 
      • Refrigerate overnight or a minimum of 4 hours. 
      • Make into balls with heaping tablespoon portions or maybe a mellon baller if you have one. 
      • Roll into powdered sugar. 
      • Place balls about 1 to 2 inches apart on parchment lined baking sheet.
      • Bake 10 to 12 minutes.
      • Remove cookies from oven and set aside.
      • Leave cookies on baking sheet for at least 5 minutes to set up before baking.
      • Dust with additional sugar while still warm if desired.
      NOTES:   Using only a tablespoon of Jello instant pudding so what the heck should you do with almost a full box of pudding?  Go ahead and add it to your cake recipe with one tablespoon short.  I've done this and it still works just fine!!!!!
