‘No Borders Cuisine’ at The Maya Kitchen

The Maya Kitchen presents the ‘No Borders Cuisine’ of guest chef Vicky Pacheco, Chateau 1771 Group of Restaurants’ Executive Chef and Chief Operating Officer on August 31, Saturday, 9am-1pm.

Chateau 1771 Group of Restaurants is composed of Chateau, Café, Sentro, WineBar, SideBar and 1771 El Pueblo.

Chef Vicky will demonstrate a signature dish from each of the restaurant concept in the group. Lemon Chicken is crisp fried organic chicken leg nuggets coated with honey-lemon sauce from Chateau; Salbacho Pizza, a Sidebar staple, is topped with salami, bacon and chorizo; Fresh Smoked Fish Spring Rolls from Sentro is a fresh lumpia of tinapang bangus, salted egg, mustasa, onions and tomato; WineBar’s Lacquered Salmon is grilled salmon steak with soy sauce and honey reduction, mashed potatoes with parmesan and Café’s Bread & Butter Pudding is brioche type bread baked in a luscious custard with butter and real vanilla bean.

The first Chateau 1771 opened its doors in Malate in 1988 and has since relocated to its present location in Greenbelt 5. Its patented “No Borders Cuisine” is a blend of well-loved Swiss, Italian and French creations.
Café 1771 in Ortigas is a beautiful dining destination serving truly unique sandwiches, breakfast, lasagna, stews, pizza and dessert.

WB 1771 is the group’s Wine Bar concept with a wine selection from 11 countries and 48 regions while SideBar is the perfect place to unwind with great food and wine.

The group has not entirely left behind the Filipino palate with its trailblazing Sentro 1771 restaurant concept. It made famous sinigang na corned beef, rated GG and more. The people behind it describe themselves as ‘living, breathing and dreaming’ Filipino food.

Chef Vicky first joined Chateau 1771 as Assistant Restaurant Manager in December 1988 and has since occupied several positions as Restaurant Manager, Executive Chef and Food and Beverage Manager.
She graduated with a Bachelor of Science in Hotel and Restaurant Administration from the University of the Philippines then got a Food and Beverage Diploma at the Les Roches, in Bluche-Montana, Switzerland.
Prior to joining Chateau 1771, she trained at The Manila Peninsula Hotel, the Hotel St. Georges and the Eurotel Riviera. She also worked as Assistant Restaurant Manager at the Puerto Galera Restaurant and Parola Bar in Daly City, South San Francisco, California, U.S.A.

Monday Foodstagram III

The rain has been on-off today, but it's still a gloomy Monday, and some parts of Luzon are still experiencing rainfall. Stay safe, everyone.

Here are the food pictures I uploaded on my Instagram page last week.


MaLing Sandwich
This week, I started each day at 4am preparing my sister's breakfast. She didn't want to eat rice, so I just prepared sandwich for the both of us. We still had salad ingredients in the fridge, so the luncheon meat was given a bit of an upgrade.

Ginisang Ampalaya
I am the one who's always preparing our meals, but for today's lunch, it was mom who cooked for the both of us. Personally, I wanted the chicken-shrimp combination to go with this dish, but we only had ground pork, which worked good as well. Thank you for the lunch, momskie.


Steamed Tilapia
Rain has been pouring almost everyday, and it was a blessing that we were able to stock some tilapia in the freezer. My sister requested I steam it instead of frying it, and I just played with the ingredients, adding slices of kiwi to go with the usual kamias (bilimbi) we put in our steamed fish, as well as leaves of kaffir lime, which we have a tree of in our garden.

Cookbooks
Yes, it's not food, but it is food related. These books are my brother's, which he bought when the MV Doulos docked here in Manila many years ago. I am looking for yummy-licious recipes to try with vegetables, and I was thankful that there were a few from these books.


Dinuguan
Mom bought some pig's blood the weekend before; we almost forgot about it, and because we still couldn't go to the market to buy ingredients, this was what we had for dinner.

J.Co Donuts
The sun shone today, and us girls took the chance to go out. After visiting St. Pio Chapel in Libis, we went to eat lunch at the Eastwood City and had some snacks at J. Co Donuts and Coffee. We took home a box of donuts, one of each flavors, just so we could taste a wide variety of flavors. We still haven't tasted every flavors, but next time we would try the ones we haven't tasted yet.


Bread Talk Fire Floss
My mom is such a big fan of the floss bread by Bread Talk. Whenever she sees a branch, she would buy some, and it was what we had for breakfast. Well, I also love the Floss Bread, but as much as this spicy one is good, I still want the regular one.

Chicken Adobo
Wednesday was a sunny day, but Thursday 'til yesterday it was raining on-off! There weren't much choices at the market, no chance for us to buy vegetables, so it's another all-meat viand for us.

Joey Pepperoni Pizzeria

I just realized that I have quite a lot of food trips that I still haven't shared here on the blog, so in order to catch up with the times, I will try to blog as much as I can.

Sister and I don't bring a lot of cash when we travel, basically because we don't have that much to burn anyway. Normally, whenever I travel north, I always have about three thousand to spend - including bus fares - no matter how long I am planning to stay on vacation. I am a very thrifty person and has already learned the many ways to stretch the budget, but there were times that I find myself spending mindlessly, and this food trip was a good example.

When sister and I once went to Baguio City, thinking where to eat was one of the toughest questions to be answered because there are just so many to choose from. However, since we were on a budget, we couldn't eat at the two places we had in mind - Cafe by the Ruins and PNKY. We decided to just go to SM City Baguio for our aunt also asked us to buy the latest issue of DiabetEASE Magazine, and it was there where we found a place to eat at. We knew there were Joey Pepperoni branches in Metro Manila, but because we still haven't tasted the food here, it was the best choice we could think of.

The place had a very spacious dining area, but because there were very few diners at that time, we decided to stay at the al fresco side, where some of the diners stayed at, maybe because of the natural cool breeze.

Choosing what to order took us time for we want to make this food trip very memorable. The place offered a few food promos, and in the end we decided to go for a plate of pasta, a small serving of pizza, and a dessert.

Sister's choice was the tuna spaghetti. A few years ago, I had a very bad cooking disaster at home when I cooked Tuna Spaghetti for the family and it left me so devastated that I stopped eating Tuna Spaghetti. Having a taste of this was a big leap for me, and I was glad I did because it tasted really good. The sauce wasn't oily, the seasoning was okay, and of course, the bell peppers tasted great.

If you're a fan of tangy, very-Italian tasting pasta, this one's for you. It may look very simple and not as decorated as the usual Pinoy Spaghetti, but it was packed with flavor.

Both pasta plates were priced at 99 each, a glass of iced tea included. Truly worth its price!

Messicana Pizza

I guess my sister has developed a liking for Mexican-flavored pizza that she ordered this as her pizza choice. Very meaty kind of pizza, something impressed my sister as she's not really into vegetables, and the Mexican seasoning was so awesome! Well, Mexican is my favorite international cuisine, that even if this one didn't have my usual pizza toppings, I considered this something very memorable.

This might not have my favorite pineapples, but this pizza was foodgasmic. Umm umm good!

Sister and I only ate two pizza slices - one from each flavors and had the rest packed to take home - or rather something to eat while traveling back home. I thought all along we planned this food trip well, until we realized we made a bad budget choice for going for our pizza. Well, the pizzas are very affordable - 170 pesos each, but at that time Joey Pepperoni also had a promo on pizza - two 8-inch pizzas for only 199 pesos. It only had two flavor choices: Ham & Bacon in Red Sauce and Ham & Mushroom in White Sauce (either go for one of each or go for two of one flavor), but it was still pizza and we could have saved 70 pesos each should we went for it. Well, sister said that the important thing was we had what we really wanted, so it was just okay.

For her dessert, she opted to go with one of her favorite ice cream flavors - coffee. Been so long since I last ate an ice cream cake (errr pie), that even if in reality it's just ice cream shaped into a cake, it still brought us many memories of our late father taking us to this cake place in Makati (called Dates & Nuts if I remember it correctly) where we ate ice cream cake at 7 in the morning. Very rare did our father took us with him at work, and the ice cream cake was our ultimate foodie memory. No ice cream cake will come as close to that level, but this one was okay.

There weren't much desserts to choose from, so with the remaining four choices, I went with this as this was very unique. I have tasted a lot of Brownie a la Mode in the past, and this provided a different twist - with the chocolate flavor coming from the choco chips. The cookie was soft and wasn't overly sweet that it paired well with the vanilla ice cream.

We split the bill as we both want to make sure that the money we had for this vacation would suffice everything. We each paid 354 pesos - quite steep for a traveler on a budget, but considering the amount of food we ate and how great tasting each were, it was beyond what we expected for a memorable food trip. At first we shy from entering Joey Pepperoni branches in the Metro as it looked posh, but knowing how affordable their food were, we knew we'd come back to dine there again.

Pizza Gallant

It's Throwback Thursday today, so let me share to you a food trip from the vaults.

We travel to La Union once or twice a year, but whenever we were there, we would always try to go to different places, even if we've already visited it. One quiet afternoon, sister and I craved for some snacks and decided to go to Pizza Gallant, located just along the highway.

The first time I tasted their food (a year prior to this visit), I wasn't impressed due to many factors. Trying their food again gave me hesitations, but one "bad" food trip won't really hinder me to try again, and this time I was very willing to give it another shot.

What we had:

No matter how each pizza parlor calls this flavor, I always tend to go for this because it has everything I want in a pizza - meat, bell peppers, onions, and pineapples. The menu indicated "thick crust," but this wasn't thick. I really love my pizza "thick," but this one didn't disappoint at all! It was packed with toppings, and even if I wasn't sure if they used mozzarella or just cheddar cheese, I didn't mind anymore... this tasted way much better than the typical "small-scale pizza" I have tried.

The very first food I tried here was their combo meal which had a slice of pizza, a small serving of spaghetti, and a piece of fried chicken. I wanted to re-taste each of the food I previously ordered, but they didn't have spaghetti that time, so I just ordered a piece of fried chicken, without the rice. Now I realized that their fried chicken tasted better when it was freshly cooked because the breading was still crispy. Nothing exceptional about their fried chicken... although I hoped I knew which breading mix they used (that is, if they used the store bought one) so I can use it at home, too.

Sister's choice of pizza. This had taco beef (beef seasoned with taco flavoring), salsa, tomato slices, and lettuce. The way we saw it, the tomatoes and lettuce were topped after the pizza was cooked, resulting in a very fresh tasting pizza. Cumin flavored beef got us worried at first if we would like this, but we did! Who knew taco can make a great pizza flavor?

I didn't know what sister thought, but she still ordered for this sandwich. Very typical... but of all the clubhouse sandwich I have tasted in Bacnotan, this was the best.

We only ate what we could handle and took home the food we weren't able to eat. Sadly, the last time we traveled to Bacnotan, Pizza Gallant has already closed down. Sad that we didn't have a pizza place to go to that is close to our place, but I hope soon there will be a nice food place in the area what will stand the test of time.

Slow Cooker Chicken-Lickin' Good Pork Chops

Actually it is a cross between the Melt in your Mouth Baked Chicken that was going around facebook and this old recipe I knew from a blog I knew long ago.  I used to make this recipe in its original form back when we were wheat eaters.  Now I am replacing her Cream of Chicken soup with the Melt in your Mouth's Greek Yogurt.  I'll flavor it with a chicken bouillon cube and end up with a new and improved hybrid recipe.

The tricky ingredient here is the chicken bouillon.  Some have wheat, herb ox and Knorr does not.  bouillon does have corn in its ingredients and some even have soy so it is not paleo.  You could sub the water and bouillon cube for some home made chicken stock and that would work very nicely



8 lean pork chops - 3/4 to 1 inch thick
1/2 cups flour
1 tablespoon salt
1 1/2 teaspoons dry mustard
1/2 teaspoon garlic powder
2 tablespoons oil
8 ounces Greek Yogurt
1/3 c. water and 1 Chicken Bouillon Cube (or 1/3 cup home made stock)

Mix dry ingredients.
Dredge pork chops in mixture.
Heat oil in skillet.
Brown chops in oil in large skillet.
Place browned pork chops in crock pot.
Add can of Yogurt, water and bouillon.
Cover and cook 6-8 hours
