Jollibee Crispy Chicken Wings

Jollibee Crispy Chicken Wings

Being a "couch potato," it was through the TVC that I first learned about this new dish Jollibee is offering and early this month, I was able to try it out. For p80 (with fries or rice and regular size drink) it was okay for me. At first I thought this was Jollibee's version of the Korean super crunchy chicken, but as the name suggested, it was crispy, NOT crunchy... which was something I appreciated, because I already know a lot of places that serves good Korean-style fried chicken.

The breading was light and airy - it was like coated with merengue, at least in texture (in my opinion). The taste was okay and dipping it in the sweet-chili sauce made it much better. Price wise, I found it a little (just a little) expensive - considering it only had two pieces (well, one wing part cut into two).

I don't know which among the two - this or the Jollibee Chickenjoy - had more calories, but, I guess the "hoping to be slender" me would just go for this when the family dines at Jollibee and I wanted a fried chicken fix.

Next time, I'd go for this with rice, just to check if this is much better with rice.

Paleo Snickerdoodle Cookies

After seeing Snickerdoodles at a party I knew immediately I had to come home and bake some.  You see, I never actually ate one before and I was dying to know what they were like.  So I went home and did a search.  OK so if you want to bake a paleo snickerdoodle it seems you will just have to buy the book.  Eventually I may buy the books, but for right now I wanted a cookie.  Soooo, I took a friends suggestion and twisted up another cookie recipe.  Here is our version, being posted now out of request!!  It really turned out good and my kids ate these up before the chocolate chip!

Cookie Dough
1/4 cup Butter (grass fead), room temperature
1 Egg

4 Tablespoons Honey
1 Tablespoon Vanilla

2 cups Almond Flour (note)
1/4 teaspoon Salt
1/2 teaspoon Baking Soda

1/2 teaspoon Cream of Tartar
2 teaspoons Cinnamon

Coating

1 Tablespoon Coconut Sugar
1 Tablespoon Cinnamon

Preheat oven to 350 degrees
  • In a Stand mixer with whip attachment (or with a hand held mixer) whip butter on medium/low until smooth and creamy.
  • Add egg and whip until fully incorporated.
  • Add Honey and vanilla and whip until just incorporated.
  • Add dry ingredients and fully combine.
  • Meanwhile, place on smallish sized place the coating ingredients.
  • Scoop cookie dough out with your large sized cookie scoop and place a ball of batter onto coating place.
  • Roll cookie around in topping and place on cooking sheet.
  • Flatten cookie with your slightly wet or oiled palm to shape you desire your final product.
  • Bake for 9-10 minutes for larger cookie or 7-8 for smaller cookies.

Note:
Honeyville is the finest ground almond flour.  This really is true!  It is  not really the expensive either, however, its not always convenient for me to have.  I am using Bob's Red Mill almond flour and grinding it finer by placing it in my coffee bean grinder or sometimes my blender and processing it for about a minute.  Careful not to over do it or it will turn into butter!!!

Green Giant Seasoned Steamers Review and Giveaway

When I had my physical a few years back the doctor told me there was really no excuse to not eat enough vegetables.  He went on to explain how the new development (ok so it was a long time ago) of the new vegetables that steam right in the bag made it so easy.  So okay, he was right.  Pre Paleo Diet, I was slacking on the vegetable department.  Sometimes I would consider it too much to do and just skip the veggie at dinner all together.  It was like that doctor could read my mind!  Or maybe it was my labs that told on me?  Now that I am on the Paleo diet, I make sure vegetables make it into EVERY meal.  In fact sometimes for lunch when I am just too lazy to make anything, a steamed vegetable pack will do just the trick.

Green Giant has a new line of Steam in Bag vegetables called Seasoned Steamers and they asked me if I would give them a try.  I looked though the ingredient list of all 6 varities (Mediterranean Blend, Tuscan Seasoned Broccoli, Brussel Sprouts with Sea Salt and Cracked Pepper, Honey Roasted Sweet Corn, Honey Dijon Carrots and Backyard Grilled Potatoes) and it seems like Brussel Sprouts will be the one that is the most Paleo Friendly ingredient wise.  I could almost hear a bunch of you say gross.  *chuckle* It's okay, I LOVE Brussel Sprouts!  No for real!  Are you ready for the ingredients of this package?

Ingredients: Burssel Sprouts, Extra Virgin Olive Oil, Sea Salt, Rice Flour, Black Pepper and Natural Flavor.

When was the last time you seen such a pure list of ingredients or a processed package?  The runners up is Tuscan Seasoned Broccoli, and the Backyard Grilled Potatoes. We don't currently eat potatoes while trying to loose weight but if we did, I may give these a try.   What do I really think?  I think you should download the coupon for $1 off and give them a try for yourself!!!!

Visit HERE to download a printable coupon for $1.00 off the purchase of one package of Green Giant Seasoned Steamers. AND if you don't like them ~ during the month of October, there will be a “Love it, or your Money Back” offer available at greengiant.com!

Would it just be easier to win one with a prize package?  Ok, here it is!

Pass the Plate Cooking Demo

It was August last year when I attended the Yummy Magazine Cooking Demo, which I enjoyed very much. Time flew so fast, I didn't even realize it has been a year already. This year, Knorr and Yummy Magazine partnered again for another cooking demo called "Pass the Plate" and will run for 5 legs!

Obviously, the October 6 and 7 events were already finished - you can check pictures on Yummy Magazine Facebook Page, and since Batangas is quite far from my location, I am looking forward to attending the event at Robinson's Supermarket in Ermita.

If you're near Lipa, Batangas on October 20, Robinson's Supermarket Ermita on November 17, or  Ayala Center in Cebu City on November 24, do check out the event - it's a free way of learning new recipes (with step by step guide), plus, if you're lucky, you can even win prizes. Well, even if you don't win in the raffle, the knowledge gained through cooking events already makes one a winner. :)

Menu Plan Monday: Week of October 15th, 2012 (Camping Menu)

It is egg week on the Gluten Free Menu Swap.  I am just going to show you this photo here below and link how to bake eggs.  Okay?  Cause my hubby is in charge of making the eggs around here and I do not really have any recipes.  Omelets and adding them to baked goos is all I got! :-).

Head on over to Lifehacker.com and read all about it.
By weeks end we will be camping. I will show you below what my Paleo Camping Menu looks like. It involves tons of pre made and the frozen foods so lucky I have off all week to work on it.  I need to get started early on making those Paleo Graham Crackers and almost paleo Corn free Marshmallows since those are the two that make me the most nervous.  I am pretty sure something based purely on sugar, like a marshmallow, could never be paleo but I will try my best to switch out ingredients (when I can).  Honey for Corn Syrup for example!

Still no weight loss!  I definitely would like to loose those last 10 pounds tho I find a marginal amount of starches is finding its way back to my diet.  Like for example I added 1/4 cup of white rice to my chicken and rice soup I made last night!  Hubby refused to eat it! :-D.   I have to can up the rest of the soup today!  It involves pressure cooking which makes me nervous.

Okay, onto the plan shall we?

Monday (Daughter is in Cheer Camp Show):
I am going to have to muddle though a new version of this recipe that nix'es the A1, Soy and sugar.  Who knows, maybe I'll post my trial!

Tuesday (boys will be at WWE Smackdown, maybe girls will get to play soccer):
Green Leaf Lettuce Taco Dinner (our favorite).
This way I can feed the boys quick and they can head out quick.

Wednesday (Church):
Hotdogs are being served up at Church Children's Program.  The adults will have to eat leftovers!

Thursday (karate & Soccer):
Photo and recipe courtesy of Urbanposer.blogspot.com
Paleo Chicken Pot Pie
One last hot oven baked meal before we head out!  Looks good huh?

Sicilian Express - A. Venue Mall

Sicilian Express
G/F A. Venue Mall
Makati Ave. Poblacion, Makati

(continuation of my food trips with K)

Sicilian Express - A. Venue Mall

We got back at the hotel a little past 5 in the afternoon; still early, but we decided to just stay at the hotel and watch TV (or go online). For dinner, it was another trip to A. Venue Mall. Checking the side entrance of the mall, K took his time reading the big menu by the wall and seeing something he hoped to eat, we entered.

Sicilian Express - A. Venue Mall Sicilian Express - A. Venue Mall

There weren't much people inside (probably because it was still early), but a few guests would drop by to order take-outs. When we were handed the menu, K was a bit disappointed that what he wanted to eat wasn't in the menu, and we were told it was no longer available. K obviously wanted to leave, but since we were accepted at the restaurant with courtesy and friendly smiles, he decided to just choose from the available options.

Spaghetti with Meatballs

Spaghetti with Meatballs. This was the solo serving, priced at p130. K said the sauce was okay because it was a little bit on the tangy side, but he didn't like the meatballs that much - one, because it was small, two, because it was a little dry. Still, he said it was okay to satisfy the hungry tummy.

Baked Fish

Baked Fish. For p145, I found this too expensive. Actually, it looked a little blah when served to me - I just scooped out the tomato sauce under the fish as well as dust it with some ground pepper to make it look more appetizing. Taste wise, well if have eaten Cream Dory fish, then you know the taste, but the sauce did give it a bit of an oomph. I just wished there were more sauce because it was really good. As for the potato wedges, well...

We wanted to eat dessert, but all they had was ice cream, so K and I decided to enter the mall and find a place for us to eat desserts. Taking aside the minimal funny misunderstandings while eating dinner, K just said eating desserts elsewhere would mean additional post on my blog. So true.

Simple Mayonnaise Cole Slaw

We are a ridiculously simple mayonnaise type cole slaw kinda family.  SOMEBODY in our Church makes an awesome vinegar based cole slaw and some day I hope to get a hold of that recipe.  I always hated vinegar based cole slaw but that is until this church dish.  It even includes green peppers but it is sliced so thin you really wont mind.  Anyway, I digress.......at home we make this recipe.  It is so simple and always well received to the point that if its store bought the comment is, "that junk mommy bought".  LOL.  Anytime I can get kids to eat raw cabbage, is a good thing.

1/2 of a small head of cabbage, quartered and sliced very thin
1 cup of Mayonnaise (See Notes)
1/2 teaspoon Garlic Powder
1/2 teaspoon Onion Powder
1/2 teaspoon Salt
1/2 teaspoon Pepper
1/2 teaspoon Mrs. Dash Table Blend
  • Combine all ingredients in a large enough bowl and throughly coat to combine.
  • Place in refrigerator for at least 30 minutes to marinade.
  • Serve cold and enjoy!

Mayonnaise:
  • Dukes Mayonnaise is a zero carb mayonnaise.  It is made with Soybean oil though which is NOT paleo.
  • You can quickly and easily make it Paleo by making your own Hellmans Mayonnaise with your stick blender and the cup it comes with 6 simple ingredients.  Click HERE to be directed to the recipe.
