Welcome to the Gluten Free Menu Swap's Paleo Themed Week!


Hello everyone and welcome to my blog!  I am hosting the Gluten Free Menu Swap this week.  This week's theme is Paleo Meals.  I have been following the Paleo diet along with my husband for a few months now and have accomplished great success in weight loss alone.  In another week my hubs and I are getting our complete physicals so we can see what this diet has done to our overall health, not just the number on the scale.

Warning, I am sharing before and after pictures of myself!!!!  It is embarrassing to me to do so but I feel seeing is believing!!!

I am not the "paleo" expert in our house.  My husband is in charge of all things paleo around here. In fact I put forth very little effort in learning anything about Paleo.  I have told my readers this before and I will tell you again, this was a challenge I initially was not willing to partake in.  After all, wasn't being Gluten Free hard enough?  We were already Gluten Free for a year or so because of my littlest one's allergy.  Wasn't being gluten free hard enough?  Yes, I said that twice!  It kept going though my mind over and over.  Paleo tosses a few extra things out and is a bit more of a challenge than being Gluten Free alone......so I was reluctant. Going Paleo, though, was not as hard for us as it would be for somebody who also has to kick the wheat addiction as well. Truth is, I WAS a tad bit chunky for my small frame size. And how many diets through the years did I force my poor hubby on?  So I reluctantly supported him and hopped on board a week later.  After all, I am the diet queen!  One thing I can do well is diet!!!

What made him start out on his first ever "diet"? Here is a little excerpt from my husbands explanation on Facebook:
"Mid May I listened to a tech podcast about a diet Steve Gibson was testing on himself and the changes it made it to his biochemistry. It interested me, so I dug into the details. My weight was going the wrong way slowly. The scientist in me saw the rationale of the diet. Eating this way is feeding the machine that we are with what it needs. 50+ lbs down, 23 more to hit the "healthy" BMI range."

Fitbomb's wife, Nom Nom Paleo, has an incredible site with awesome photographs of what she eats every day as well as a smart phone app with recipes and such. Do you need a few other recommended places on the web for paleo recipes? Word of caution..... some of these links are not exclusively Paleo.


I have used the word diet several times throughout this post so far.  But did you read how my husband explained it?  Eating this way feeds the machine with what it needs.  It is more like lifestyle change.  Now when I eat any grain or sugar source I recall in my mind The Rosedale Diet and what Dr. Rosedale says in his dietary guideline.  If I eat sugars/carbs/grains I do so consciously knowing I am doing something harmful to my health.    OK, onto the menu plan shall we?

Monday:

Thursday:
This is a picture of Paleo Lo Mein.  I want to call it stir fry tho because that is simply what it is.
I love the flavor of this dish and I also love putting into it all the extra veggies I have laying around in the fridge from earlier in the week.  

Friday:
Paleo Pizza ~ no cheese please.
several of the blogs I liked to above have a pizza crust recipe you can try.

Saturday:
Spaghetti Squash with Bolognese Meat Sauce
We really do try and lay off the tomatoes but I love this dish!
Urban Poser and Against all Grain blogs both have a tomato-less sauce I want to try very soon.

Sunday:
Hungarian Pot Roast (love this recipe)
served with Mashed Cauliflower and a side a broccoli
Again I am using arrowroot to thicken the juices the roast puts out.


See, it is not really that hard to follow now is it?  You will not starve, I promise.  Fill your omelet in the morning with a half cups worth of veggies or have almond flour pancakes for breakfast.  Try some Avocado chicken salad for lunch (without the bread) or switch it up and use tuna.  Sweet tooth you say?  Well thats easy.  Bake up some of Elana's Paleo Banana Bread or make some of my very own custard base ice cream to make your own ice cream creation!

Angela at Angela's Kitchen is not necessarily Paleo but she does have a wide range of wonderful recipes on her blog. She also has lots of recipes that could easily be modified if you were to pursue this diet.  This week the meals she is serving that could possibly be Paleo is Plum Balsamic Chicken (use Polaner All Fruit), Taco Meat served up taco bar style, Sweet and Spicy Glazed Chicken (use Polaner All Fruit and Coconut Aminos or Tamari as replacements for soy), and finally what would be my family favorite ~ Sausage and Peppers!  She also has lots of other great menu ideas for a busy mom on the go.  Head on over there and read how she manages to serve up great meals in addition to the annual back to school activities!!!

Heather at Celiac Family, along with her husband, is trying out the Paleo Diet for a week.  That is the advice I give anybody who asks, give it a week and see how you feel!  Great news Heather!!!  She shares lots of incredible links to great Paleo dinners as well.  I may have to give a few of these a try myself.  She is serving up Lemon Dill Salmon, Angela's ^ Crock Pot Fajitas, Spaghetti Squash with Grilled Chicken, and Pulled Pork (just be careful with the BBQ Sauce).  I love the Cauliflower Rice and Summer Squash Sauté she plans to serve as a side dishes too!  Check out Heathers page and see how she makes out next week!

#Foodtography at SM City North EDSA

From writing personal day-to-day stories and sharing scrapbook layouts I made years ago, I made a transition to "travel blogging," mainly sharing about food trips at first. It has been four years ago, and while I know I take pretty decent food pictures, I know I still have so much to learn.

With the advent of cell phones with cameras and digital cameras, as well as the boom of social networking sites, almost everyone with an image capturing device and an account to any social networking site have started taking pictures of anything - especially that food they are about to eat (as well as the "aftermath" of a bountiful feast).

With this kind of a habit, SM City North EDSA recently lauched #Foodtography, a fun game for SM City North EDSA diners to become a foodtographer.

Mechanics are way too easy - just dine at any restaurant or food station in SM City North EDSA and take a picture of your meal, snacks, or drinks. Of course, you also have to tell where you had it, the price... and the dining experience if you want (though this last one's optional). Post the image on your Facebook wall, tag SM City North EDSA Facebook Page and hope you win a shopping gift card or a dining gift card.

The mechanics may be easy, but of course this is #Foodtography, so it would really help if you'd give it a great winning shot. Food may not be super lavish - remember, judges will base it on the composition of the image and not the price tag of the food, so don't just take pictures of your food "just because," instead, channel that photographer in you and come up with something that will wow people. Who knows, it might be the start of your food photography career. :)

Menu Plan Monday: Week of September 3rd, 2012


I am now officially thinner than I was before I had my first child.  I put on a pair of pants the other day that I used to wear and they were actually purchased a bit on the tight side.  They now are so big the droop if I run.  LOL.  Hubs is in the 50+ weight loss category now and was declared "the Biggest Looser" at that work thing.  This diet started as a my way of supporting  him on his first ever diet.  What I learned was I had intolerances to several things, not just wheat.  I don't think I will ever consciously eat dairy, grains, legumes or sugars again!!!

I practically stalk the guy who's job it is to discount the meat at our Walmart! LOL.  I love snatching up the New York Strips for $4 a pack.  If you notice I serve that a lot, that is why!!!


Monday:

Tuesday:
Fried Pork Chops seasoned with Mrs. Dash, Cauliflower Rice, Green Beans

Wednesday:
Roasted Chicken Breasts, Broccoli and Spinach

Thursday:
Paleo Pizza.  There are lots of paleo pizza crusts out there on the net so I'll just search one up from a reputable bogger.  I will use my own Pizza Sauce recipe minus the sugar.  OK so Mozzarella is not paleo.  Did you ever hear of Tomato pie?  For some odd reason I used to peel the cheese off my pizza as a kid and just eat the sauce and bread.  Eventually my mom would order it just like that and called it "Tomato Pie".  It was just garlic chunks and high quality pizza sauce.  So go ahead and top your pizza with anything except the cheese.

Friday:
Green Leaf Lettuce Taco Dinner with diced Avocado

Saturday:
Sirloin Steak, Sauteed Mushrooms, Broccoli

Chowking Chow Pao (Chinese Sausage)

Yesterday, sister asked mom and I if we could go out. I initially planned to go to the Weekend Market, but sister didn't want to wake up early, so we just decided to go out and eat lunch together. We didn't want to go to SM Fairview as we couldn't think of anything to do after eating, so we just went to Lagro (Hilltop Mansion) to eat at Chowking.

I was eating "brunch" at 9:30am when sister suggested we go out. Still full from my meal, I just went for their newest product - the Chow Pao. Mom had tasted the Beef one before and didn't give good comments, so I just went for the Chinese Sausage, as I am a big fan of sausages. There were two variants - the regular one, which is the cheapest at 29 pesos, and this the special one - with tofu, cabbages, and carrot slices at 35 pesos.

The Mantao bun was firmer than the other type I tasted from different Chinese restaurants, but surprisingly, I did love this one. The sausage tasted okay, and eating it with the tofu, carrots, and cabbage made it more delicious. It was like eating siopao and sandwich.

Next time we dine at Chowking, I might skip the Siopao Asado and will just have this instead. :)

Us Having a Stroke of Luck

Upon arriving in Manila from Iloilo, K and I were greeted by my brother, who voluntarily came to see us so he could get (and take home) the two boxes filled with pasalubong from Iloilo. The boxes weren't that big,  but brother knew I might have a difficult time taking the boxes and my bags home. It was a gesture I appreciated a lot.

Problems with the airport taxi services prompted brother to travel with us to the hotel where K and I were staying, and since it was already time for dinner and K still hasn't eaten his lunch, we invited brother to eat dinner with us.

Right in front of the hotel was A. Venue Mall. There weren't much restaurants, and when we got there, some staffs of different restaurants would try their best to convince people to dine in their restaurant. There were two people from two different restaurants who were trying to convince us, and we didn't want either any one of them to "win," as we didn't want the other one to feel bad, so we decided to turn both of them down and just entered this quiet looking restaurant called "Fluke!" which meant as "a stroke of luck."

Honestly, the name is quite interesting in a slightly negative way. Stroke of luck? As in "tsamba"?

Putting aside my personal questions with the restaurant's name, I did love the interiors. It has a homey feel with lots of lighting! They also have magazines, which I gladly browsed while waiting for food. The wait staff were so nice and accommodating - they answered each of our queries with a happy disposition, something that made us truly feel at home.

Iberian Chicken

Iberian Chicken. Brother chose this as his meal. The menu had pictures of several dishes, and him seeing a picture of this dish quickly made him chose it. For someone who has a very hearty appetite, my brother appreciated the size of the chicken, as well as the amount of the vegetable side dish. The taste, he said, was similar to Adobo, but not really. This has something unique that he couldn't put a finger on.

Chicken Cutlets

Chicken Cutlets. Diners had the option to have this served with rice, but K chose to go for mashed potatoes, as he wasn't used to eating rice. Seeing this dish made me realize how much K loved this kind of food - breaded and fried. During this two-week holiday, he has had beef, pork, and now chicken.

Taste wise, it was typical, but good.

Fish and Chips

Fish and Chips. Me eating pork, chicken and beef during this holiday made me crave for fish. I know this wasn't a healthy way to eat fish (as this was fried), but I never minded it then... I just wanted to eat fish. This one wasn't the best I have eaten, but I did love that the breading was very crunchy and the dipping sauce tasted great.

One minor complaint I had that night - they served K and brother's food, and it took time before they served my food. I was actually making some sarcastic remarks that it didn't look good that the men were already eating while the lady was sitting there wondering when her food will be served. Well, it was just a minor complaint as I didn't mind waiting that much, though I really felt it was awkward that they let the woman wait for food.

Profiteroles

Profiteroles. I did order my dessert along with my meal, so this was served at the same time as my meal. It wasn't so sweet, so I liked it.

Me eating my dessert made K and brother hoped to eat desserts, too. As soon as they placed their orders, K joked about how the tables have turned - they were now waiting for desserts while I ate my profiteroles. :)

Pineapple Upside Down Cake. K's dessert. Very simple looking cake, but I did love how it tasted.

Egg Pie

Egg Pie. Brother's choice. Another typical tasting pie for me, but I liked that the crust wasn't too hard and the the egg filling had this "melt in the mouth" feel.

Like what I said, I loved how people at the restaurant treated us. We actually ran into the restaurant's cashier the next night and she smiled and said hello to us as if we were friends or something. :) Good food, good service (well, I still considered it good even if I waited for my food)... I guess we hit a Fluke that night.
