Menu Plan Monday: Week of August 20th, 2012

Happy Birthday Week Mommy!!!

Hubs lost 47 total pounds already and only recently have I noticed (I know, I know.... has my head been in the sand) that he really does have a long skinny frame.  I can reach my one arm 3/4's of the way around him now where before my hands did not touch.  LOL, his family and friends would not notice him at all.  I am again plateaued.  These last 8 lbs. will be stubborn I guess.

I am still two finger typing so lets get on with it shall we?  My kids are both back to school full time as of today and still sticking with the usual favorites.

Monday:
Hungarian Pot Roast, Sauteed Mushrooms

Tuesday:
Mrs. Dash Seasoned and pan fried Pork Chops, Cauliflower Rice, Broccoli

Wednesday:
BBQ Chicken Breasts, Broccoli and Spinach

Thursday:
Grilled Strip Steak, Green Beans, Sweet Potato Fries

Friday:
Grilled Country Style Ribs, Mixed Steamed Veggies with butter

Saturday:
Sirloin Steak, Mashed Cauliflower, Spinach

 Because of my "heavy" snacks, it was already about 8pm when K and I decided to eat dinner. Going to SM Iloilo wasn't a good idea (for me) because the other food places there have branches in Metro Manila. The Korean restaurant a floor below our room was already closed, so asking an online friend where to eat, she suggested we go to Smallville. Sounded good to me as people have been talking about this place (which is near SM Iloilo by the way), and this dinner became my ticket to get there.

There were a lot of food places in the area, but most didn't appeal to K. Walking around, he saw this place that looked family-friendly, so we chose to eat here.

Sure enough, it was family-friendly. It wasn't big, but while dining, a very big group came and the restaurant was able to accommodate it. As you can see in the first picture - they do have an al fresco side for diners who would like to smoke.

I find the ambiance a bit homey... and their placemat was really something amusing (too bad I wasn't able to take pictures of it). It listed a lot of things about "You're a Filipino if..." and the things listed were just hilarious - You're a Filipino if you have a tabo in the bathroom, you have the giant wooden spoon and fork as wall decor, etc. etc.

Wasabi Burger

Wasabi Burger. K didn't want something heavy, so he went for this, as this is something unique for him. I wasn't able to taste this one as my order was way too much for me to handle, but K said the wasabi wasn't so overwhelming and the mango did provide a good sweet twist to the burger.

Baby Back Ribs

Baby Back Ribs. The menu said "good for two," but I wasn't at all prepared it would be this big! I actually felt like a glutton having this in front of me, but it was surely good. It had an ample amount of meat that could satisfy four diners, and the corn that went with it gave a good compliment. I offered some to K, but he didn't want to... and halfway through, I asked him if we can take it out and give to some kid outside, but he strongly disagreed with me, saying if something happened to the kid, we might be held liable. Since our room at the inn didn't have refrigerator, we just left the food I wasn't able to eat.

Orange Juice

Orange Juice. As always, K went for Sprite, for today I was in the mood for a glass of OJ. :) It tasted just fine.

That dinner took about an hour - since I was really trying to eat all my food. When we got back at the inn, I had a very bad case of indigestion and heartburn, which caused K and I to have shallow sleep. Not a good way to spend our last night in Iloilo, but I did learn a good lesson - just eat what you can handle and not feel guilty about the food you can't finish.

Korean Fried Chicken at the Comforts of our Home


If you recall not too long ago, I did share that I wanted to try this new McCormick product, and about a week after that, I had the four variants at home ready for me to use. I have always been a fan of McCormick; their Buffalo Wings mix was something my brother and I go for, so even if we haven't tried this, we already knew we would like it.


This fried chicken mix is easy to use - just empty out the packet #1 into a bowl and add 1/4 cup of water and mix. Don't add any more than 1/4 cup of water because it would be a little runny, but if you would like a thick batter, then add a little less than 1/4 cup of water.

A day before I tried using this, I learned how to properly do the "Double Deep Fry" technique - and since this is Korean Fried Chicken, might as well try it for this time, right?


Dip chicken in batter and fry for about 5 minutes until it is light brown in color, just like the picture above. Fried chicken has always been a tricky thing for me, so I just set the fire on low and covered the pot while cooking it - so the steam trapped inside will also help cook the chicken pieces. After 5 minutes, just set aside the chicken to rest.


Re-fry the chicken pieces until it is golden brown. Crispy fried chicken, I tell you!

The batter can be used for 1/2 kilo of chicken. If you want it to be crispier, I suggest you dust the chicken with a mix of cornstarch and rice flour before dipping it into the batter.

It is really best that you do two batches of chicken, so you can fry the second batch while the first batch of chicken is resting - no need to turn off the fire and re-heat the oil once the chicken has rested. 

Now that the chicken is cooked, on to Step Number 2 - coating the chicken with the sauce. The pack said, "Place the chicken in a container, pour the sauce and shake it to distribute the sauce," but since this is a new product and I am a little apprehensive that the family might not like it, I just served the sauce alongside the chicken.

The family has already tried three of the four flavors:


Soy Garlic. Honestly, I loved this more than BonChon Chicken. It's not overly sweet, and I do hope McCormick can come up with a bigger pack for the sauce because the glaze outside of the chicken just wasn't enough. :)


Kimchi. I admit I was a bit apprehensive about this at first because I am not a fan of kimchi, but a year ago, I got to taste Kimchi flavored popcorn and loved it, so this was the next flavor we tried. If I loved the Soy Garlic flavor, I loved this even more. It has this pucker-up taste - yes, a little tangy - but it has a kick of saltiness, too, making it an instant favorite. It just went well with the chicken!


Bulgogi. Another good flavor, but it is quite similar to the Soy Garlic one, so I wasn't so impressed with this.

The Spicy flavor I think is Soy Garlic, so we might try it next time. Of the three I tasted, it is very obvious that I loved the Kimchi one. It is also the cheapest one at just 36 pesos (Bulgogi was over 40 pesos), so I guess I'd stock up on that one.

I am loving how the food industry is evolving - back then, fried chicken simply meant marinading chicken pieces in calamansi juice mixed with soy sauce, then the breading mix came out (some with gravy mix, too), and now this. Gourmet eating at the comforts of our own home... with all the rice you can eat, too! :)

Menu Plan Monday: Week of August 13, 2012

Well I broke the plateau curse, I am down another 2 pounds.  Hubby is plateaued now!  I guess I gave it to  him!!! tee hee.  I had a reader tell me about her hubby who lost a lot of weight and he introduced a tad bit more calories to trick the body.  Thats what I did.  I was eating so little that I guess my body wanted to hold onto whats left.  My middle is getting so thin, it looks like I work out. Crazy man!

I literally spent like $20 on food this week.  I still have leftover meats from purchasing two sets of 5 for $20 at the store last week.  It is crazy how much less we eat now.  I picked up more dollar frozen veggies, eggs, lettuces and Paleo approved Salami!!  My son has been enjoying what he calls a Reeces Peanut Bitter Cup Sandwich for lunch.  One of the bread slices is Nutella (oh the sugar horrors I know) and the other is Peanut butter.  He says its like he smooshed the candy between the bread slices!!! ;-)  Now if only I can find a better Hazlenut spread, a HEALTHY one!?!?!?!?!  It is mandatory that he bring a raw veggie and a pure unprocessed piece of fruit so I feel better about the whole thing.

I have been baking like a mad woman this weekend.  So far I made an Apple Coffee Cake,

Sunday:
Rosemary Chicken, Cauliflower Rice and French Green Beans

Monday:
Green Leaf Lettuce Tacos.  Oh how we all love this so much!  It is so messy tho as lettuce does not hold in the juices!  ;-D

Tuesday:
Stuffed Bell Peppers.  I made pizza sauce the other day which will convert nicely into pepper stuffing.  I'll just add cauliflower rice and ground turkey.

Wednesday:
Pork Stir fry with onions and cabbage.  I love adding whatever veggies I have leftover from earlier in the week,  We never waste a drop around here!

Thursday:
Filet Minion, Sauteed Mushrooms and Spinach.  Still had two left from last time.  

Friday
Roasted Chicken Legs, Cauliflower Rice, and Whatever Dark Green veggie we have left.

Avocado Chicken Salad

The hardest thing about the Paleo Diet (in my books) is the elimination of dairy. I really missed the creamy texture if cheese.  That is until I discovered my love of Avocados!  They have all the rich fatty creaminess I missed.  I started adding avocado to every salad I ate.  It's like pure creamy heaven.  What I love to do is use Avocado anywhere I would like to use creamy cheese,  my first stop was Mayo.  While I do make my own Paleo Mayo, its time consuming and I won't use it once its stored due to it having raw eggs. I don't need a fancy recipe to use Avocados either. I will dice it and add it to just about anything.  Dishes like Taco's and Chili now must have small diced avocado on top instead of the traditional cheese.

Where am I going with sharing all of this? Avocados from Mexico’s Website, of course! There it is, Avocado Chicken Salad.  
The prep is the biggest part of this dish.


2 cups of diced up cooked Chicken (using leftovers is a great idea)
1 small (1/4 cup) Onion, finely diced sweet or red
4 strips of Bacon, cooked and crumbled
1 Avocado, half diced, half sliced
2 Tablespoons Mayo (Dukes has no sugar for low carbers but is not Paleo)
1 teaspoon Garlic, minced
1 /2 teaspoon Onion Powder, Salt, Pepper & Lemon Juice
Romain Lettuce, ripped into bite sized pieces

  • Place chicken, onion and bacon into small mixing bowl.
  • On a clean cutting board, mash with fork or the back of a spoon the diced avocado with mayo, garlic, spices and Lemon Juice until it is fully incorporated and is creamy.
  • Fold dressing into the small bowl of chicken until fully combined.
  • Serve a heaping cup of chicken salad over top of Lettuce and top Avocado slices.
  • Serves 2-3.

A Refreshing Break

Coffee Break
Jaro, Iloilo

Hello, foodies! Sun is up now, but Internet connection's not that good yet. It's been a while since I shared food trips from way back, so let me continue now, so I can catch up with the current time. :)

After I went pasalubong shopping at the Biscocho Haus, I told K to walk past the store because I needed some refreshments. It was already late in the afternoon, and even if he and I shared some granola bars while waiting for a funeral service at the Jaro Cathedral to finish, I wasn't able to have a drink. Walking from the Cathedral to the Biscocho Haus made me really thirsty.

Thankfully, there's a coffee shop nearby. Coffee Break is not something new to me as I have seen branches in the Metro Manila and brother has talked about it before. Even so, it would be my first time to taste what they have to offer, so I was sort of excited about it.

The place isn't that big, and that time it was just K and I at the store, but during our stay some people came by - all took out their orders.

Oat Meal Cookie

Oatmeal Raisin Cookie. K wasn't much into eating snacks, so he only went for a bottle of Gatorade this one cookie. I didn't taste it as I don't eat raisins, but he said it was good.

Chocolate Mousse

Chocolate Mousse. I admit, I went there to have something cold to drink, but seeing how affordable their food are, I decided to try it, too. Chocolate Mousse is one of my favorite pastries - maybe because it has less "bread" and more "frosting." This one is so good - had the right balance of flavors, and since it's not that big (possibly 3x2 inches or a little bigger than that), it was just enough to satisfy a sweet tooth. For some it might be small... but this one's only p35, so one can order another one if it's not enough. :)

Irish Creme Frappe

Irish Creme Frappe. I am not a coffee-holic, so I don't know how each flavors should taste like. I went for this one 'coz it sounded delicious, and it was.

Tiramisu

Tiramisu. This K and I shared. This wasn't part of our original order... after tasting how good their Chocolate Mousse was, I went back to order another pastry. Again, it wasn't that big, but because I have had a lot of something creamy and sweet, I asked K to help me finish this. It was good, it had the hint of alcohol taste I look for in a tiramisu, and the crushed cookie at the top added more texture and flavor to the pastry.

It was a good way to refresh - as always, K and I continued sharing stories about anything and everything, and from here we went straight back to the Inn. I hoped for us to check out Nelly Garden - even just photograph it from the outside, but with a big box of pasalubong, we thought it would be best to just head straight to the Inn.
