Paleo Chicken Croquettes, Gravy, Mashed Cauliflower & Broccoli
These were a HUGE hit in our house. I used Against All Grain's Almond Flour bread recipe for bread crumbs both inside and out as well as her Cream of Mushroom Soup. Otherwise I followed my old recipe. My husband said that he knows I made these before, but they were never as good as these! LOL.

Heather over at Celiac Family has another lovely menu plan on her blog. She is serving her family this week: Tuscan Chicken (sounds incredible to me), Pizza on Deby Crusts she picked up to try, Fish Tacos with Guacamole, Pulled Pork Sandwiches. She has a Basic Meringue Cookie Recipe that she makes into Christmas Trees and Snowmen (among other things). They are absolutely adorable and you simply MUST see them. I think these cookies would be cute on top of a cupcake too! She also is sharing her rollout Sugar Cookie recipe ~ and ya know, you can never have too many incredible sugar cookie recipes.
Paige at Not Missing a Thing's husband made them a turkey this weekend so she gets to enjoy some leftovers. Her menu includes Homemade Turkey Noodle Soup, Gina Chicken (hey this recipe is paleo), Skillet Fiesta, and Sausage, Peppers and Onions (our fave).
Kimberlee at The Peaceful Momma shared her Simple Gluten Free menu plan with us this week. She planned out her week complete with Breakfast, Lunch and Dinner. Her menu includes items such as Apple Sandwiches, Chebe Bread Pizza, Quesadillas and Crockpot Chili.
Carrie at Ginger Lemon Girl is kicking off her week with a big pot of slow cooker beef stew that will fill in the blanks though-out the week! She will make a huge tossed salad plate, toss some turkey chops in the slow cooker and serve Homemade Pizza using her Vegan Pizza Crust recipe. I am really very interested in the Crustless Kale and Bacon Quiche she has featured on her plan for Sunday! I wonder if it freezes well? And last but not least, check out her No Bake Oatmeal Cookies, Spritz Cookies, and Refrigerator Pinwheel Cookies. I never personally made pinwheel cookies before and I am certain that my baby girl will really enjoy helping me make them.
Samantha at An Awkward Girl Gets Fit is a paleo eater like us! She has been trying to simplify things lately and has set her menu plan into categories. Simply fill the categories in with Pinterest. Great idea! Samantha is serving up Tomato Basil Parmesan Soup (sounds good), Baked Fajitas, Balsamic and Onion Pot Roast, and Coconut Flour Apple Pancakes. I am intrigued with the Grain Free Molasses Cookies and Paleo Toffee Caramels recipes she shared.
Angela over at Angela's Kitchen is joining us today with her menu plan. She is just returning from Mixed conference so freezer cooking is saving her menu plan early this week. She is going to pull from the freezer her Chicken with Apricot Sauce and Swedish Meatballs. Wednesday she will Make a double batch of Chicken and Broccoli Casserole and stash one in the Freezer for another time. She completes her week with Crock Pot Roast and Veggies and Gingerbread Waffles! Angela is featuring a Christmas Cookie Countdown 2012 over at her blog. Every Saturday and Wednesday she will share a different cookie recipe! So far she has Gingersnaps, Pecan Tassies, Pumpkin Whoopie Pies, and Lemon Shortbread Cookies.
