I am not feeling very chatty this morning. Hubs lost 37 pounds I lost 10. Going to try and get some make ahead snacks made for our trip this weekend! All is well we us, hope the same is with you. This meal plan is a result of using up whats left before vacation! ;-)
Monday:
Fried Pork Chops, Mashed Cauliflower, Asparagus
Tuesday:
Chicken Legs, Cauliflower Rice, Spinach
Wednesday:
Green Leaf Lettuce Tacos topped with tomato, sour cream and avocado
Thursday:
Spaghetti Squash with Bolognese Meat Sauce
Weekend:
Now for the exciting part of our meal plan. We are headed to St. Louis for a mini vacation. While a vacation means I should probably eat out each day I know that is not reasonable for a family that has special dietary needs. I am going to bring my electric skillet along and count on the room's microwave to heat things like packaged veggies and defrost frozen pancakes for a quick meal for the kids.
Friday (Hotel):
Today we head out, it is a 3-1/2 hour drive. We will head to the zoo first in the morning, have a picnic lunch, and the Science Center in the afternoon.
Breakfast: Egg Omelets before we head out.
Lunch: Packed Ham Sandwiches on Elana's Paleo bread for a picnic lunch
Dinner: We are going to take it easy and enjoy the hotel pool in the evening.

Saturday:
Character Breakfast at Hotel ~ a promise I gave to the kids!
Lunch: Packed Ham Sandwiches on Elana's Paleo bread for a quick lunch at the Amusement park
Dinner at Hotel Restaurant
Sunday:
Breakfast: Bagels & Cream Cheese, Frozen Pancakes, Hard Boiled Eggs
Lunch: Chick-fil-a on the way home
Dinner: TBA
Snacks:
Mixed Nuts/trail mix
