Delicious Chicken in Lee Kum Kee Soy Sauce
{Recipe from: Lee Kum Kee}

Ingredients:
  • 1 whole chicken (about 750 grams)
  • 8 cups water
  • 1 cup oil
  • 3 tablespoons grated ginger
  • 1 bunch green onion (about 25 grams)
  • salt and pepper (to taste)
Ingredients (Sauce Mix):
  • 3/4 cups Lee Kum Kee Premium soy sauce
  • 1 piece chicken bouillon cube
  • 1 tablespoon chicken stock
  • 1 1/2 tablespoons sugar (or to taste)
How to Cook:
  • Mix all ingredients in a bowl, stirring until the bouillon cube and sugar dissolves. Set aside.
  • Wash chicken. Boil broth, season with salt and pepper and place the chicken, breast part at the bottom of the pot. Simmer until the chicken is cooked. Rinse with cold drinking water and drain.
  • In a wok, heat the oil. Hold chicken above wok with a pair of tongs and pour hot oil over chicken to make the skin crispy.
  • Arrange chicken on a serving platter with grated ginger and green onion.
  • Pour a little oil over the chicken again (about 2 tablespoons) and pour sauce mix around the serving plate.
Notes to Consider:
  • For a darker look, simmer chicken with water and sauce mix. Reduce the leftover liquid until thick.
  • If you can't find the LKK Premium soy sauce, you can also use their regular soy sauce.

This dish will take an awful lot of time to cook, so if you plan to cook this, be sure you have ample time to prepare it. Be sure, too, that the chicken is fully drained of juices as the oil might splattter as you pour it over the chicken, and it might not make the skin crispy. The dish presented didn't have crispy skin as there wasn't enough time to drain all the water in the chicken, but it still tasted good. The sauce complimented the chicken and the onions and ginger helped in adding more flavors in the dish.
