Tilapia and Dinengdeng

I am entering the third week of my Habit-a-Week Challenge, and this week focuses on "Eating a Veggie." Well, I have already included vegetables as part of my diet most days of the week, but I sure want to try to eat at least one kind of vegetable everyday (excluding garlic and onion used for sauteeing dishes, of course).

Last night, I cooked Papaya-Malunggay Dinengdeng and fried tilapia. We do love this dinengdeng (it's one of my favorites), and it was just so easy to prepare! It has been said that tilapia is not really that healthy (but don't quote me on that as I forgot the words to the article I got to read from DiabetEASE magazine), but it was the only fish available in the market I can fry. All other kinds of fish were so small and can only be cooked either sinigang or paksiw.

I wanted to eat more vegetables that dinner, so I just went for 1/2 cup of rice. I already made a line up of what to cook for the next week, and although I listed one purely-meat dish (Chicken Adobo), I will be cooking dishes that include vegetables. What's for lunch today? Ginisang Toge. :)
